Unsurprisingly, my sweet tooth has been out of control these days. (Hello, week 40 of pregnancy. I’m lookin’ at you.)
Which is to say that I’m not normally a dessert-every-day type of person, but right now? Hoooooo boy.
And these delightful, individual-sized Funfetti Ice Cream Sandwiches aren’t helping.
I meant to share these treats with y’all earlier this summer, but the time got away from me, then I got to thinking about when I could put these into my editorial calendar… and WHY NOT share them the day before my due date?
I’ll tell you one thing: I bet one or two new or expecting mamas could use and enjoy an ice cream sandwich right now.
And the best part is these beauties are quite simple to make at home! All you need is a little time.

What you need to make this recipe:

- Glass bowls
- Measuring spoons
- Nonstick baking mat
- 1.5-tablespoon cookie scoop to be used for both the cookies and the ice cream.
- Two sheet pans
- Wax Paper — or parchment paper
Let’s talk ingredients!
In addition to the tools above, you’re going to need some ingredients to make this recipe, too! Chances are, you might already have some of them in your fridge or pantry. Scroll down to the recipe card for the full measurements and instructions.
Here’s what you need:
- Funfetti Cookies — these need to be baked and completely cooled. If they are warm when you start assembling the ice cream cookie sandwiches, the ice cream will melt
- Vanilla ice cream — use your favorite ice cream brand!
- Rainbow nonpareils
- Rainbow sprinkles
You can also vary up this recipe by swapping out the ice cream AND the cookie to the one of your choosing.
Pro tip: Swap out the cookies and make a Chocolate Chip Cookie Ice Cream Sandwich instead!
How to make Ice Cream Sandwiches with Homemade Cookies
Bake the cookies. I’ve got a whole post on how to make Funfetti Cookies, so pop on over there to learn how to make these colorful treats. 🙂
It’s best to bake the cookies a few hours or even a day in advance so they’re cool.
Prepare the pan. Line a rimmed sheet pan with wax paper. Place it in the freezer. It’s nice to have this cold so you can work quickly and keep the ice cream from melting.
Place half the cookies on the frozen sheet pan, the top side down. The flat side should be facing up to create a flat surface for the ice cream to be scooped on.
Place the other half of the cookies with the tops facing up. These will be the cookies that you place on top of the ice cream.
When the cookies have been arranged, remove the ice cream from the freezer.
Scoop the ice cream onto the cookies lying on their backs with a 1.5-tablespoon scooper. Do these all at once to work more efficiently.
When all the ice cream has been scooped onto half of the cookies, take the top cookies and press them down on top of the ice cream.
If you want to add additional sprinkles to the outside of the ice cream sandwiches or a hot fudge drizzle, do it now!
Transfer the baking sheet with all the cookies into the freezer for 1-2 hours, or until the ice cream is frozen solid again.
Place the cookies in a freezer-safe storage container, and keep them there until it’s time to serve.
How to store:
Once the cookie ice cream sandwiches are frozen solid, wrap individually in plastic wrap. You may also place them in an airtight storage container in the freezer.
Keep frozen for up to 3 months.
Frequently Asked Questions
Personally, I think Funfetti Cookies are wonderful for an ice cream sandwich because they don’t fall apart or get soft in the freezer. The sprinkles add a crunch, even after being in the freezer for a while.
Another cookie that might work is Browned Butter Chocolate Chip Cookies with Bourbon and Walnuts or Pecan Chocolate Chip Cookies.
I think that vanilla is awesome here, but you can definitely switch things up by adding chocolate, strawberry or a number of other flavors. Use your favorite.

If you’re adding extra sprinkles, roll the ice cream sandwiches in the sprinkles just after scooping the ice cream so the sprinkles can freeze into the ice cream.
I would dip or drizzle the sandwiches in hot fudge sauce just after placing the top cookie on so it can solidify in the freezer.
Erin’s Easy Entertaining Tips
A homemade ice cream sandwich would make a fabulous treat to end a Backyard Barbecue, a patriotic party or any outdoorsy summertime gathering.
Here are some things that I would do to make this easy:
- Make the ice cream sandwiches in advance. Since they keep in the freezer for months, you can make them WELL in advance.
- Double or triple the recipe for a crowd. Better to have too many than not enough!
- Swap out the sprinkle colors for holidays, etc.
- Make variations of this recipe to serve to guests. Pair strawberry ice cream with Chocolate Wafer Cookies or chocolate ice cream with Oatmeal Chocolate Chip Cookies.
- Add extra sprinkles for some extra color!
Tips and Tricks for the BEST Ice Cream Sandwich Cookie
- Bake the cookies in advance, and give them time to cool completely. This is imperative, y’all.
- On your baking sheet lined with wax paper, line up the cookies in preparation for making the ice cream sandwiches. Half of the cookies should be laid on their backs while the other half should be on their fronts. (The ones that are placed right-side up are the top cookies. The ones that are flipped are the ones that you’re scooping ice cream onto.)
- Don’t get out the ice cream until it’s go time… then when it is, scoop as quickly as possible. (Please learn from my initial mistake of taking FOREVER here: The ice cream will melt, and while the sandies will still be tasty, they won’t be nearly as luscious because half the ice cream will have melted out of ‘em.)
- As soon as you’ve got all the ice cream scooped, squish the top cookies on top of the ice cream scoops. Press them down into a manageable size for biting. (Another mistake I made the first time, haha.)
- Transfer the baking sheet to the freezer immediately. Freeze for 1-2 hours before transferring the cookies into a freezer-safe container, where they will stay until you serve them.

Funfetti Ice Cream Sandwiches
Ingredients
- 30 Funfetti Cookies
- 1 pint vanilla ice cream
