Welcome to this week’s Dinner Divas Weekly Meal Plan!
This week’s menu is delicious and calls for several slow cooker and Instant Pot meals. We know you’re busy, and we want to make dinner as simple as possible for you. Also, we’re celebrating all the fall flavors this week, so you should get excited.
What is the weekly meal plan?
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

October means we can have ALL the pumpkin recipes, right? I'm all about this Slow Cooker Turkey Pumpkin Chili, too, because it's so seasonal and comforting and GOOD. How do you feel about savory pumpkin recipes? We can all get on board with this, yeah?
Tuesday's Dinner: Slow Cooker Chicken Wild Rice Soup
Another slow cooker recipe for us this week because this time of year is always bonkers. And who doesn't love Chicken Wild Rice Soup to finish a day strong? Comfortably Domestic's recipe is stunning (HI, look at that photo!) and perfect for Tuesday.
Wednesday's Dinner: The Best Creamy (Stove Top) Mac and Cheese
Mac 'n cheese for dinner? You bet! We're all about shaking things up here with the Dinner Divas, and this stovetop rendition of the family favorite is perfect for a mid-week dinner. Add peas or broccoli, bacon or chicken, and jazz this classic up a little, though it certainly doesn't need anything extra!
Thursday's Dinner: Instant Pot Texas Chili
This spicy, meaty chili is perfect for a chilly evening! We love this recipe because you can make it on the stovetop on a lazy weekend or in the IP on a weeknight. Serve with various toppings, like cheese and corn chips and jalapenos and sour cream, and let every family member dress their chili the way they like.
Friday's Dinner: Butternut Squash Arugula Salad with White Beans and Maple Vinaigrette
Friday night... salad? Oh yes! This Butternut Squash Arugula Salad with White Beans and Maple Vinaigrette is something special to end the week with, and let me tell you: I'm obsessing over this vinaigrette! Y'all, these dinner rolls could pair with SO MANY of the dishes served up this week, it's unreal. The only question is: To serve them with butter or to dip in soup (or the salad vinaigrette--no judgment here!)
