Welcome to this week’s Dinner Divas Weekly Meal Plan! As always, this week’s menu is delicious and includes more seasonal goodness. We’ve also got a dessert for you (because like you, some of us have sweet teeth) and a fun summertime drink that can be sipped all day long.
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Langostino Lobster Roll
I've eaten maaaaaybe three lobster rolls in my entire life, and they were consumed in New England. Never until I met Cheryl from Pook's Pantry would I have considered that I could make them at home! And what a weeknight dinner this is!
Tuesday's Dinner: Black Bean Cakes with Fire Roasted Red Pepper and Jalapeno Cream
Hip, hip, HOORAY for a vegetarian dinner the whole family can enjoy! These Black Bean Cakes sound utterly delicious, and the cream sauce that comes with 'em adds some good spice. If you're feeding kids who are hesitant about spice, serve the sauce on the side so they can dip.
Wednesday's Dinner: Spicy Chicken Guacamole Sandwich
Oh, I'm INTO any sandwich that involves guacamole, so y'all know I love the sound of this one! Serve it with chips or a side salad, and you're set for dinner.
Thursday's Dinner: Tuna Pesto Crostini
Crostini for dinner? Heck yes! Y'all know I'm all about finger foods, and this crostini was inspired by my all-time favorite sandwich from when I was living in Italy. It's incredibly flavorful and family-friendly, too! My 4-year-old has enjoyed helping me make the pesto and also smearing it on the toasted bread before we add the cheese and tuna.
Friday's Dinner: Superfood Veggie Cakes
Superfood, you say? Oh yes! End the week with some super healthy veggie cakes! Do you have a guess of what veggies are in them? Pop on over to Pook's Pantry to see! And them whip 'em up because YUM.
Dessert Recipe: Brown Sugar Cinnamon Pound Cake
I have no words for this pound cake other than YUM. I'm a sucker for any type of baked good, and this one sounds beautifully simple, but also incredibly flavorful. And you can decorate it, too! What's not to love?
Drink Recipe: Watermelon Agua Fresca
No joke: We have been sipping on this agua fresca ever since I developed the recipe a few weeks ago. It's insanely refreshing and perfect for a hot summer's day.
