In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Dinner Divas Weekly Meal Plan (May 6 - May 10, 2019)
You know what you can make and pair with basically anything/everything? TORTILLAS. And they're actually quite simple to make at home to step up your TexMex game. Once you make these tortillas, you can put anything on them and make it a taco night! And who doesn't love a taco night?
If you're scratching your head at the name of this dish, I get it. I felt the same way, then I headed over to Jenni's blog to discover that these are "basically fat flautas stuffed to the gills with moist shredded chicken, deep fried, cut into segments, and stood on end in a circle on the plate." Yes, please, and thank you!
OK, so apparently, I was the only one who didn't get the memo that this week was about TexMex foods. That said, if we have to stray from TexMex for one evening, I want to stray to this Instant Pot Macaroni and Cheese. Decadent and versatile, this mac 'n cheese is the stuff your fam has been dreaming of. And it's all made in the IP and super simple!
Let's all take a moment to swoon over the deliciousness that is this Cheese Stuffed Queso Fundido Chicken. Everything about this dish is calling my name, and I cannot wait to make it. Pair it with rice and beans (or maybe a salad), and you're good to go.
We have been SO into bowls recently because we can all make our own and dress them as we like. I know these Chicken Burrito Bowls are going to be a huge hit because of that. Not a fan of tomatoes? Add a few more avocado. Don't eat cheese? Skip it! So easy and perfect for a family with varying tastebuds.
OK, real talk: this Old-Fashioned Chocolate Chess Pie from Pastry Chef Online is the stuff dreams are made of. I haven't had a chess pie in ages, and I need to get my hands on a slice of this one ASAP. You should, too.
