Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is features a lot of Mediterranean flavors, one of which are vegetarian and one that is grilled. And the extras? Oooooooooh, we’ve got a cake and a cocktail to keep things delish.
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Mediterranean Baked Chicken Meatballs
I don't know why it doesn't cross my mind more often to make a meatball that's not my mom's recipe. (She has an amazing Italian rendition, taught to her by a friend's Italian grandmother.) But goodness, I need to start branching out because Pook's Pantry is bringing the flavor with Mediterranean Baked Chicken Meatballs for dinner tonight, and they sound AMAZING.
Tuesday's Dinner: Slow Cooker Chicken Andouille Beans and Rice
Comfortably Domestic, once again, is speaking my language! I love the sound of this take on red beans and rice, and it definitely packs some flavor into this week's menu. Bonus points for cooking all day in the slow cooker, too!
Wednesday's Dinner: Hummus Pinwheels with Spinach and Feta
The fact that these Hummus Pinwheels with Spinach and Feta are for dinner tonight makes me smile because I love appetizers-turned-dinner. Also, Pastry Chef Online always does a fabulous job combining flavors in her recipes, and I love the sound of hummus paired with spinach and feta in a bite-sized treat!
Thursday's Dinner: Grilled Chicken Shawarma
Continuing with our Mediterranean flavors, I'm bringing Grilled Chicken Shawarma to the table for us tonight. This chicken marinates for a few hours before you cook it on the grill. Pair it with a Greek salad, some pitas, tzatziki and hummus, and you're good to go for an incredibly flavorful dinner.
Friday's Dinner: Pork Burger with Hatch Chiles
We're getting into grilling season, and it makes me so happy. Also, what better way to start the weekend than with a homemade burger? I love the ingredient list for Pook's Pantry's Pork Burger with Hatch Chiles and know these are gonna be a hit with our family. Pair 'em with potato salad or some fries, and you're golden.
Dessert Recipe: Butterscotch Cake with Butterscotch Icing
When I saw that Pastry Chef Online was recommending her Butterscotch Cake with Butterscotch Icing for us this week, I about fell out of my chair because I love butterscotch! And somehow have never had it in cake form before. Clearly, I've gotta fix this, and if a layer cake isn't right for a weekly menu, I don't want to be right...
Drink Recipe: Strawberry Moscow Mule
It's officially SPRING, and I can think of no drink more perfect for us to sip than a Strawberry Moscow Mule. This cocktail is very easy to transform into a mocktail (simply leave out the vodka) and is equally as tasty. I would know since I recipe tested it without booze last summer while extremely pregnant and still highly recommend it.
