Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is full of comfort foods–some old and some new–and some St. Patrick’s Day treats, too.
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Lighter Chicken Stroganoff
Stroganoff is one of the dishes I love, love, love but never make at home because it's so decadent. I love this twist on the classic that Comfortably Domestic is bringing to the table this week. Packed full of flavor and with CHICKEN!
Tuesday's Dinner: Ballymaloe Irish Stew for Two (or Four)
Have you ever eaten this Irish dish? I've never tried Ballymaloe Stew before, but it looks comforting as all get out. And I bet my husband, who is a lamb lover, would ADORE this comfort dish that's a little different than something we normally make.
Wednesday's Dinner: Instant Pot French Onion Soup
My family SWOONS over this Instant Pot French Onion Soup, and for good reason. It's a quick dish to make, it's comforting and filling and flavorful, and you can make it entirely in the Instant Pot. (You can broil it in the oven to finish it, but that's not a requirement. It's flavorful straight out of the IP!)
Thursday's Dinner: Superfood Veggie Cakes
Maybe you're like me and feel like, as a whole, you need to do a better job of getting more vegetables in your diet. Pook's Pantry saves the day this week with her Superfood Veggie Cakes. Don't these look lovely and like a different way to introduce some veggies into dinner?
Friday's Dinner: Vegetarian Stuffed Peppers
Another veggie-forward meal, wahoo! Tonight, Comfortably Domestic is serving up her Vegetarian Stuffed Peppers for the whole fam. Filled with onions, tomatoes, corn, black beans and rice (and a ton of spices!), I have a feeling this will become a family favorite.
Dessert Option #1: Butterscotch Creme Brûlée
Y'all. Y'ALL. Butterscotch Creme Brûlée is winning my heart over now because hi, hello, how can it not? My sister used to make Creme Brûlée at home all the time, and I think I'm going to be taking a page out of her book this week because I can't resist this rendition!
Dessert Option #2: No Churn Guinness Brownie Ice Cream
