Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu, as always, is scrumptious and includes some insanely comforting dishes. With two pasta recipes, an Instant Pot classic, a Southern comfort food and more, we’re doing this week’s menu up right.
Also, we’re serving up a fried side (or appetizer… or meal if you’re me) and an Easter dessert that you should bake this week for the heck of it.
What is the weekly meal plan?
Every Friday, I share a new menu plan here that always includes FIVE dinner options and TWO extras. This menu is curated by me and a few friends, and we call ourselves the Dinner Divas because, well, that’s what we do.
Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks and more.

This lemony, garlicky linguine is tossed with fresh kale to make the ultimate farmers market or CSA box meal! Since we've been having so many greens show up in our CSA box, this recipe is timely, and I have no doubt my kids will love it because they adore anything with pasta.
Thursday's Dinner: Southern Chicken and Dumplings with Flat Dumplings
This Southern classic dish is the MOST comforting dish... and why wouldn't we want comfort food these days? I love Online Pastry Chef's version of this recipe for those flat dumpling noodles. They're the real deal.
Friday's Dinner: Heirloom Tomato Bruschetta
Can we throw tomatoes, smoked mozzarella and basil on some toasty bread and call it dinner? I say YES, especially with the season we're in and how we all need an easy dinner. This bruschetta recipe is a classic for a reason, and not only is it gorgeous, but it's also wonderfully delicious, too.
Side Dish Recipe: Corn Fritters
I love me a corn fritter, but I've never even considered making them from scratch... until Cheryl shared this recipe. Who knew they were so easy? And since I have more time on my hands these days (and shockingly, all of the ingredients this recipe calls for), these beauts are going to happen in my kitchen ASAP.
Dessert Recipe: Carrot Cake with Ginger Cream Cheese Frosting
This classic carrot cake from Comfortably Domestic comes with a twist in the icing, and I don't know about you, but I have a feeling I'm going to LOVE the ginger in it! With Easter coming up, this recipe is the perfect one to bake this week to perfect before you serve it to your fam (or the folks you're living with) on Easter Sunday.
