Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu highlights some St. Patrick’s Day flavors, as well as some coconutty goodness. We’ve got soup, hand pies, sandwiches and more for you to cook up!
What is the weekly meal plan?
Every Friday, I share a new menu plan here that always includes FIVE dinner options and TWO extras. This menu is curated by me and a few friends, and we call ourselves the Dinner Divas because, well, that’s what we do.
Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks and more.

Monday's Dinner: The Best Easy Sloppy Joe
Sloppy Joes remind me of my childhood, which is why I am so excited to serve them on Monday to my kids! These classic Sloppy Joes are the perfect easy and quick Monday night meal. Serve with steamed veggies (and maybe some rice, too) for a complete meal!
Tuesday's Dinner: Mashed Potato Beef Hand Pies
Hey-o! Let's make Mashed Potato Beef Hand Pies for St. Patrick's Day! The beef cooks in Guinness in the Instant Pot while you cook the mashed potatoes. Put them all together in a hand pie package for a delicious handheld dinner. Make 'em in advance and throw them in the freezer if you'll be at work!
Wednesday's Dinner: Langostino Bisque
I love a soup so much, no matter the time of year or a weather, and this Langostino Bisque is essentially a lobster bisque! Creamy and comforting, this soup is exactly what we need on Wednesday night.
Thursday's Dinner: Coconut Chicken Tenders
These crunchy chicken tenders are something kids AND adults can both love! Served with a Spicy Grapefruit Marmalade (because who doesn't love a dip?), it's hard not to love these tenders. Pair them with your favorite steamed veggie and a grain, and you've got dinner!
