What is the weekly meal plan?
Every Friday, I share a new menu plan here that always includes FIVE dinner options and TWO extras. This menu is curated by me and a few friends, and we call ourselves the Dinner Divas because, well, that’s what we do.
Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks and more.
We hope this weekly menu helps you create your shopping list and prepare for the week ahead, as well as provide inspiration. And hey, if it makes your life a little easier, too, we’re thrilled to help!

Monday's Dinner: Hasselback Stuffed Chicken
I love a good chicken dish, and this Hasselback Stuffed Chicken is a little different than the birds we normally bake. Saute green beans or spinach to make this a whole meal and swoon over its flavors!
Tuesday's Dinner: Chicken with Mushrooms and Thyme
Comforting for the wintertime and utterly delicious, this Chicken with Mushrooms and Thyme is the ultimate one-pan dinner that's easy to put together and even easier to eat. Serve it with rice or potatoes and a steamed veggie (if you're feeling like it!) to make a complete meal.
Wednesday's Dinner: Seared Scallops with Raspberry Gastrique
Seared scallops are one of my favorite "fancy" at-home date night meals that look challenging but are actually really easy. Served with a slightly sweet-acidic raspberry sauce, it's hard not to gobble these up in no time flat! Trust me when I say you can totally do this, even if it sounds like something that could be out of your league...
Thursday's Dinner: Slow Cooker Lentil Soup with Ham
Slow cooker soups are all the rage these days, and this one, featuring lentils and ham, is a little different than the other ones my family has made recently. Rich and flavorful, this goodness cooks all day long while you go about your life, and then provides a warm, comforting meal when you get home. What's not to love?
Friday's Dinner: Broccoli Bacon Pasta Carbonara
Happy, happy Valentine's Day, friends! Tonight, we're elevating a traditional carbonara pasta with BROCCOLI and BACON! (Yes, shouting is totally necessary.) I love the sound and feel of this pasta and know it's going to be the PERFECT date night at home meal to share with the person (or people) you adore.
Dessert Idea #1: No Churn Junior Mint Chocolate Ice Cream
Now I don't know about you, but I eat ice cream year round, no matter the outdoor temperature. And I love the sound of this NO CHURN Junior Mint Ice Cream because chocolate and mint is one of my favorite flavor combinations! The real question is: Do you make this for Valentine's Day? Or enjoy a bowl every night this coming week?
Dessert Idea #2: Dark Chocolate Soufflés
Dark chocolate is one of my all-time favorite ingredients for dessert, and these Soufflés are out-of-this-world chocolatey. If you love chocolate, this is for you because these baked goods are suuuuuuuuuper rich. If you're not into chocolate, I suggest baking something else for your sweet this week!
