This week, we’re all about the comfort foods and trying to make them a little lighter as we start off the new year.
So in this week’s menu, we have soups, lighter renditions of comfort food classics and then we finish it with a breakfast treat (that I’m told tastes like dessert) and a delightful bourbon cocktail, too.
What is the weekly meal plan?
Every Friday, I share a new menu plan here that always includes FIVE dinner options and TWO extras. This menu is curated by me and a few friends, and we call ourselves the Dinner Divas because, well, that’s what we do.
Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks and more.

I don't know about you, but since the start of the new year, I've had a hankering for comfort food... but I haven't wanted to eat a ton of it because it's normally so heavy. Enter this LIGHTER Chicken Stroganoff. With all the flavors of the classic and served over a bed of egg noodles, what's NOT to love about this meal?
Beef carnitas are one of my favorite TexMex dishes, but they take so darn long to get right. Enter: The Instant Pot! Online Pastry Chef shows exactly how to get these fall-apart-in-your-mouth carnitas without sacrificing half your day cooking. Serve 'em with some rice and beans (and some guac, too), and you're good to go!
Comforting and oh-so-tasty, this Beer Chili recipe is one I pull out again and again this time of year. Made in a Dutch oven with ground beef, tomatoes and a bottle of a beloved Texas beer, this chili is pretty darn easy to throw together and perfect for a chilly weeknight meal.
We're all about the comfort this week, and tonight, it comes in the form of a VEGAN soup! Now, if you're a meat eater, I get that vegan stuff can sound intimidating (or you might wonder why you would make it), but let me tell you this: If I'm gonna eat vegan soup from anyone, Pook's Pantry is the person I'd trust to ensure this dish is amazing. Packed with veggies and deliciousness, this is a big 'ol bowl of comfort!
Another lighter dish for us to enjoy this week! And let me tell y'all, it's not lacking on flavor, even though it's "lighter." Baked Potato Soup is one of my favorite comfort soups, and I cannot wait to serve this up to my whole family. I have a feeling there won't be any left!
OK, I don't know about you, but I'm intrigued by these maple bacon-flavored popcorn balls. Maple bacon is one of my favorite breakfast combinations, and with popcorn, it sounds heavenly! I'm sure I won't have any protesters when we make this at my house, too. What about you?
This time of year, I like my comfort foods, and I like a more intense cocktail. Bourbon is normally my liquor of choice, and when combined with cranberry and lemon in this Blizzard, it absolutely sings, making the PERFECT wintertime sipper.
