Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is delicious. Once again, we’re covering all our bases and have vegetarian and vegan options, as well as some dishes for the meat eaters! We’ve also gathered a fabulous side dish that you’ll want to make over and over again, as well as a PUMPKIN breakfast.

What’s the weekly meal plan?
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Vegan Creole White Beans
Vegans and meat eaters unite with these vegan beans from The Great Vegan Bean Book! We're making this Monday a meatless one, and these beans are filling and satisfying for all. Serve 'em with rice and steamed veggies, and you're good to go!
Tuesday's Dinner: Pork Carnitas Enchiladas
These carnitas enchiladas require a little bit of work (hey, the meat's gotta cook in the slow cooker for a long while, and then you have to make the enchiladas), but they're worth the effort, especially if you have helpers! We love these with refried beans and rice.
Wednesday's Dinner: Butternut Squash Risotto
Butternut squash is the ultimate fall veggie, to me, and I love that Pook's Pantry has used it in a risotto recipe! Comforting, fall-ish and delicious, this risotto is perfect for a weeknight dinner!
Thursday's Dinner: Creamy Onion Soup
How good does this Creamy Onion Soup sound, y'all? As someone who is obsessed with all things onion, I know I'm going to gobble this up. Served with crackers or crusty bread for dipping, this soup makes the ultimate comforting meal for all!
Friday's Dinner: Cauliflower Pizza Crust
We're celebrating PIZZA NIGHT with this low carb (and utterly scrumptious) pizza crust! Add your favorite toppings, and you've got a fabulous and flavorful dinner for the whole fam.
Side Dish Idea: Melting Potatoes with Garlic and Herbs
Have you ever eaten MELTING POTATOES? If you haven't, you're in for a treat because these are incredible! And paired with garlic and herbs, they're even more spectacular and the perfect side dish to pair with so many different dishes.
Breakfast Idea: Pumpkin Churro Waffles
CHURRO waffles? Oh yes, my friend. And they're pumpkin, too, because it's October and fall and pumpkin season! I cannot get enough of these, and I have a feeling they won't last long in our house because we all love pumpkin and churro flavors.
