Welcome to this week’s Dinner Divas Weekly Meal Plan!
This week’s menu, as always, is delicious. With the arrival of September, we are serving up some more comforting dishes and fall flavors. So as you’re perusing this week’s menu, you will notice that our meal plan contains more seasonal flavors, and I am so excited about it. (It’s just a shame that fall won’t arrive in North Texas for another month.)
What’s the weekly meal plan again?
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Instant Pot Split Pea Soup with Ham
Get some comfort food in the form of Instant Pot Split Pea Soup with Ham on Monday night! This classic soup, made quickly in the electric pressure cooker, is all kinds of perfect. Pair it with a crusty bread, and dinner is set!
Tuesday's Dinner: Rosemary Pesto Pork Roulade
This Rosemary Pesto Pork Roulade is a taste of the fall! Including apples, spinach and gouda, this roulade is stuffed and ridiculously delicious. Serve it up with a simple salad, potatoes or green beans to make it an easy meal!
Wednesday's Dinner: Instant Pot Beef Carnitas
Say it with me: beeeeeeeeeef carnitas! We love carnitas in our house, and one of my favorite ways to enjoy them are over a sweet potato hash. The beauty with these is you can turn them into a taco (or a salad! or a quesadilla! or anything in between!) and serve with a side or two to win dinner on Wednesday.
Bonus points: It's made in the Instant Pot, so you don't have to prepare super far in advance and throw it into the slow cooker or oven in the morning.
Thursday's Dinner: Classic Salmon Burgers
Fire up the grill and serve Classic Salmon Burgers to the whole family! These simple salmon burgers highlight the freshness and flavor of Alaskan sockeye salmon. Serve with fresh avocado slices and lettuce, then enjoy immediately. SO tasty!
Friday's Dinner: Patatas Bravas Hash Brown Crust Pizza
We have a theme of PIZZA on Friday nights here in the weekly meal plan, and this Patatas Bravas Hash Brown Crust is the PERFECT base for the pizza of your dreams! Add cheese and your favorite toppings to kick the weekend off right!
Dessert #1: Ghoriba Bahla ()
These Moroccan Shortbread Cookies sound SO flavorful! Bake these beauties up with the kids (or a family member, or by yourself) this weekend to have a sweet treat to enjoy throughout the week.
Dessert #2: Mint Smores Bars
