Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is singing with summertime flavors and easy peasy dinners that the whole family will love.
Oh, and we’ve got a summer fruit dessert and a summery drink that’s perfect for sipping during a warm weather gathering. (Or on your couch–no judgment here.)
In case you’re new around these parts, I share a new meal plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas.
Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Stuffed Tomatoes
I'm just so-so on tomatoes when you give 'em to me from the grocery store, but a homegrown tomato? And one stuffed like this? Oh yes. I'm absolutely into it, especially for an easy summertime dinner. And Pook's Pantry has given us TWO ways to stuff tomatoes this week. Who's excited?
Tuesday's Dinner: Garlic Pork Quesadillas with Mango Salsa
We love quesadillas in our house, but I rarely think to make them as the centerpiece for dinner. Well, we're doing just that this week, and Comfortably Domestic's rendition with pork and a mango salsa sounds utterly delightful!
Wednesday's Dinner: Hummus Toppings for a Unique Meal
Adding other flavors and ingredients on top of hummus to turn it into dinner? Heck yes! Our older daughter took hummus in her lunchbox to school daily this past year, and she's going to be over the moon with these new ways to enjoy her favorite dip! Which one are you excited to try?
Thursday's Dinner: Whole30 Taco Zucchini Boats
We haven't done a Whole30 in almost two years, but my goodness, do these Whole30 Taco Zucchini Boats star in our home every summertime. Whether or not you're Whole30-ing, these zucchini boats are utterly delicious and insanely flavorful. (They call for some salsa, which is always fun!) Make the cooking of 'em into an event, and get the whole family involved.
Friday's Dinner: Easy Bruschetta Recipe with Melon
Y'all know I'm all about some bruschetta, and the summeriness of this rendition makes my heart sing! Calling for melons and blueberries and a little creaminess, this is a light and flavorful dinner that's colorful and fun to eat.
Dessert Option: Strawberry Peach Sonker
Have you ever tried Sonker before? I'd never even heard of it until last summer, when Jenni from Pastry Chef Online taught me all about it. And her strawberry and peach rendition of it sounds like the perfect summertime treat. Who wants a big 'ol serving this week? Meeeeeee!
Drink Option: Strawberry Margarita
In my book, you can never go wrong with a drink that calls for fresh fruit and a mixer. That's why these Strawberry Margarita are the perfect summertime drink. Calling for very few ingredients and mixing up easily for one or a crowd, these margs are the perfect party drink!
