Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is super tasty, featuring several vegetarian options. To make the deal even sweeter, we’re sharing TWO desserts that are perfect for Easter week, too!
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Shortcut Vegan Lahmajoun
Question for you: Have you ever eaten Lahmajoun before? I have't, but the combination of peppers and onions and chickpeas and hummus sounds amazingly flavorful and PERFECT for the whole family! Since we all love hummus (and eat it in our lunches most days), I know this will be well received.
Tuesday's Dinner: Vegetarian Spinach Lasagna
We've got another vegetarian meal for y'all tonight which features my Vegetarian Spinach Lasagna! This lasagna is incredibly flavorful (and super fun to make with kids!) It takes a little bit of time to make, so I advise making it in advance so all you have to do is pop it into the oven on Tuesday evening.
Wednesday's Dinner: Easy Zucchini Fritters
Zucchini season is almost upon us, and I don't know about you, but I'm always looking for unique ways to serve one of our favorite warm weather veggies. These Easy Zucchini Fritters are PERFECT for that and PERFECT for a Wednesday night dinner, especially if the weather is warming up where you live.
Thursday's Dinner: Sausage Stir Fry
I don't know why, but I never really consider making sausage for dinner... but whenever I have a dish like this Sausage Stir Fry, filled with sausage and peppers and snow peas, I wonder WHY I don't ever think of that! Do you make stir frys at home, too?
Friday's Dinner: Hummus Pinwheels with Spinach and Feta
I love a snacky dinner like these Hummus Pinwheels, and they're perfect for Friday night, especially since our Fridays often include friends. These are easily picked up and enjoyed by people of ALL ages and can be made in advance to serve to your family and/or friends. What's not to love? Pair 'em with wine, and you're set to kick off the weekend right!
Dessert #1: Strawberry Cream Cheese Icing
Real talk: I could eat this Strawberry Cream Cheese Icing by itself... but think of how lovely it would be on a strawberry cupcake or cake, on a brownie or even on toast. Whatever you decide to slather this icing on, it's going to be delicious!
Dessert #2: Chocolate Sunbutter Eggs
Easter is next weekend, and homemade Easter treats are SO much fun! I love the sound of these Chocolate Sunbutter Eggs from Comfortably Domestic because they're like an old favorite... but homemade. If you're looking for a treat to make with your kids, I highly recommend this one!
