    Why I love this recipe:

    This Pomegranate Hot Chocolate recipe is something I’ve wanted to make for a while — because I’m totally obsessed with pomegranate — and because it’s been cold here in Dallas.

    And so last week, I needed a big ‘ol mug of comfort after a frigid morning.

    Insert this Pomegranate White Hot Chocolate.

    It’s familiar enough to harken childhood memories of sipping cocoa while being different enough to satisfy my adult tastebuds, which don’t enjoy the saccharine sweet of most hot chocolates these days.

    This hot chocolate is unbelievably creamy. And that creaminess is balanced with the tartness of the pomegranate juice.

    In all honesty, it kind of tastes like a white chocolate-covered pomegranate seed… and I adore that.

    However, if you’re into super sweet hot chocolate, this is probably NOT the recipe for you because the only sweetness added to the mixture is the white chocolate.

    Let’s talk ingredients!

    In addition to the tools above, you’re going to need some ingredients to make this recipe, too! Chances are, you might already have some of them in your fridge or pantry. Scroll down to the recipe card for the full measurements and instructions.

    Here is what you need to grab from the grocery store:

    • Unsweetened pomegranate juice — this is the base of our drink, which is very different than our usual hot chocolate base, which is typically milk or a milk-substitute. This adds a delightful tartness to the drink.
    • White chocolate baking chips — these add creamy sweetness to balance our the tart of the pomegranate. Make sure to use a high-quality one!
    • Pure vanilla extract — use the best you can afford. This helps bring together all the flavors!
    • Garnishes — I used a combination of larger marshmallows, pomegranate arils and white chocolate baking chips for this, but you can use whatever makes you happy.

    How to make Pomegranate White Hot Chocolate

    Warm two cups of the pomegranate juice in a large saucepan over medium-high heat.

    When it begins to simmer, add the white chocolate and whisk constantly until it melts into the juice.

    Remove the pan from the heat, and pour in the vanilla extract.

    Add the remaining cup of juice, and continue whisking until all the chocolate is melted.

    Serve immediately with your favorite garnishes, and enjoy!


    how to store:


    Let cool completely, and store in an airtight container in the refrigerator for 2-3 days.

    Please note that the hot chocolate will begin to separate after 45 minutes or so, so when you reheat it in a saucepan or the microwave that you will need to whisk it to combine all the ingredients again.

    Erin’s Easy Entertaining Tips

    Hosting a hot chocolate party? Serving this Pomegranate Hot Chocolate is a perfect choice.

    If I were serving this to share, here are a few things I might do…

    • Make a hot chocolate bar for guests to serve themselves and garnish their mugs. (You could also create a hot chocolate board if you’d prefer this or have a smaller space!) 
    • Double or triple the recipe… and keep it warm in the slow cooker so that everyone can have a mug.
    • Ask guests to bring their own mugs! This is a great way to cut down on dishes. Make sure to clear the sink before the party so they can rinse them out before heading home. 
    • For bigger parties, you might want to make extra hot chocolate and keep it cooking in slow cookers in another room. When one runs out, then you have a backup. (Ask to borrow a friend’s slow cooker — no need to buy a new one just for the occasion!)

    Ingredients
     

    Hot Chocolate

    • 3 cups unsweetened pomegranate juice separated
    • 1 ½ cups white chocolate baking chips
    • 1 tablespoon pure vanilla extract

    Garnishes

    • Large marshmallows
    • Pomegranate arils
    • white chocolate baking chips

    Instructions
     

    • Warm 2 cups of the pomegranate juice in a large saucepan over medium-high heat on the stovetop.
    • When the juice begins to simmer, measure in the white chocolate. Whisk constantly until the white chocolate begins melting into the juice.
    • Remove the pan from the heat.
    • Immediately pour in the vanilla extract and the remaining pomegranate juice. Continue whisking until all the white chocolate has melted.
    • Serve immediately!

    Notes

    Serve the hot chocolate immediately, as it will begin to separate if not enjoyed within 30-45 minutes.
