Let’s ring in the new year with HOT CHOCOLATE!
Specifically POMEGRANATE WHITE HOT CHOCOLATE!
Because while many folks are focusing on healthy-healthy-healthy right now, January at The Speckled Palate is all about comfort. This year, I’m focusing on finding balance and not denying myself the foods I want to enjoy because it’s a new year and I feel societal pressure to lose weight after the holidays.
Life’s too short, y’all.
While I’m all about healthy recipes—you can find lots here!—and exercising to improve my health and feel good, I’m not dieting or participating in any healthy lifestyle challenges this January. Instead, I’ll be attending the same weekly yoga classes and running outdoors and eating the foods that make me happy during the chilliest time of the year.
That said, if you’re starting your new year with a new diet, awesome! I hope it shapes January positively for you, and when all is said and done, you feel strong and healthy and happy.
Because that’s all we should ever want, right?
So… Pomegranate White Hot Chocolate.
This recipe is something I’ve wanted to make for a while—because I’m totally obsessed with pomegranate—and because it’s been cold AF here in Dallas.
Like, colder than it was all last winter cold. Which isn’t saying much, but my Southerner blood is thin and going a year without experiencing below-freezing temps has made me all that much more of a wimp.
And so last week, I needed a big ‘ol mug of comfort after a frigid morning.
Insert this Pomegranate White Hot Chocolate.
It’s familiar enough to harken childhood memories of sipping cocoa while being different enough to satisfy my adult tastebuds, which don’t enjoy the saccharine sweet of most hot chocolates these days.
This hot chocolate is unbelievably creamy. And that creaminess is balanced with the tartness of the pomegranate juice.
In all honesty, it kind of tastes like a chocolate-covered pomegranate seed… and I adore that.
However, if you’re into super sweet hot chocolate, this is probably NOT the recipe for you because the only sweetness added to the mixture is the white chocolate.

Pomegranate White Hot Chocolate
Ingredients
Hot Chocolate
- 3 cups unsweetened pomegranate juice separated
- 1 ½ cups white chocolate baking chips
- 1 tablespoon pure vanilla extract
Garnishes
- Large Marshmallows
- Pomegranate Arils
- White Chocolate Baking Chips

Instructions
- In a large saucepan over medium-high heat, warm two cups of the pomegranate juice.
- When the juice begins to simmer, add the white chocolate. Whisk constantly until the white chocolate begins melting into the juice.
- Remove the pan from the heat.
- Immediately add the vanilla extract and the additional cup of pomegranate juice. Continue whisking until all the white chocolate has melted.
- Serve immediately!
