These Boozy Peanut Butter Bars feature pretzels and bacon, and they are her brainchild. When I discovered this recipe, I knew this was what I would make because YUM.

    These Boozy Bacon Pretzel Peanut Butter Bars are something else, y’all.

    They’re a little bit sweet, a little bit savory, and they have an amazing crunch. (Thank you, pretzel pieces!)

    And they have the flavor of bourbon for some extra punch. Because you can never go wrong with bourbon. And honestly, the splash of bourbon is the unsung hero that brings it all together.

    This awesome snack bar recipe is simple to put together and even easier to enjoy.

    Please note that we are not using semi-sweet chocolate chips or any melted chocolate to make this easy recipe. We want the pretzels, peanut butter and bacon to the star of the show.

    What you need to make this recipe:

    Let’s talk ingredients!

    In addition to the tools above, you’re going to need some ingredients to make this recipe, too! Chances are, you might already have some of them in your fridge or pantry. Scroll down to the recipe card for the full measurements and instructions.

    Here is what you need to get at the grocery store to make these peanut butter-bacon bars:

    • Unsalted butter — you need a stick of this goodness. I like using unsalted butter in all my baking because then I can control the salt in the dish.. and since this one involves peanut butter and pretzels and bacon, it will have enough.
    • Light brown sugar — this sugar has the wonderful notes of molasses. If. you have dark brown sugar, that will work, too.
    • Egg — a large or extra large egg from the store or farmer’s market are what you are looking for.
    • Pure vanilla extract — use the best vanilla you can afford! This helps bring everything together.
    • Creamy peanut butter — I used unsweetened peanut butter since we’re sweetening these bars up with the brown sugar. Feel free to use the PB you’ve got on your shelf.
    • Bourbon — use whatever you like to sip on, so long as it’s not ‘fancy.’ I used pecan bourbon, but any bourbon should do as long as you like its taste.
    • All-purpose flour — this brings everything together. We keep unbleached AP flour in our house, but the regular kind works here, too.
    • Bacon — you want to cook this and chop it up. You’ll need about two bacon slices.
    • Mini pretzels — use your favorite brand. You’ll break up some to go inside the bars for a nice crunch while others will top the bars.

    How to adapt this recipe:

    I haven’t tried it, but you certainly can! Here are some thoughts about substitutions…

    Make it dairy free. My favorite 1-to-1 substitutes for butter are vegan butter, vegetable shortening or room temperature (still somewhat hard, not melted) coconut oil.

    Make it booze-free. Skip the bourbon and add a healthier splash of vanilla.

    Make it gluten-free. Since it calls for a very small amount of flour, you can probably substitute the AP flour for a 1-to-1 gluten free flour mixture without issue.

    How to make peanut butter bars with bacon and bourbon

    Prepare. Preheat your oven, spray the square baking dish, and start making that batter!

    Cream the butter and sugar. Measure them into a large bowl, and cream together with a stand mixer or hand mixerThis will take a few minutes to get them good and incorporated.

    Add the rest of the wet ingredients one at a time. Crack the egg into a small bowl, and pour it into the creamed butter and sugar. Stir until combined, then pour in the vanilla and stir. Then add the bourbon… and stir again.

    Add the peanut butter. Beat until smooth.


    Finally, add the dry ingredient. (This is flour.) Blend until combined.

    Then sprinkle in the pretzel pieces and bacon pieces. Fold them in with a rubber spatula

    Pour the batter into the prepared baking dish, and spread it in an even layer.

    Press pretzels into the batter to create a design, then pop them into the preheated oven to bake until an inserted toothpick comes out clean. (It’ll take about 20 minutes or so.)

    Then all you do is let ’em cool, and then you can enjoy them!


    how to store:


    Let cool completely before storing in an airtight container. Since these involve bacon, you will need to store them in the refrigerator. They should last 3-4 days.

    Frequently Asked Questions

    I’m allergic to peanuts. What can I substitute for peanut butter in this recipe?

    If you’re not allergic to tree nuts, you could probably swap almond butter for the peanut butter here. That said, I haven’t tried it, so I cannot 100% confirm this is a good idea.

    (Also, this recipe’s main ingredient is peanut butter. It might be best to find a dessert where you’re not allergic to the main ingredient so you don’t have to make substitutes… If you need dessert inspiration, you can search my dessert recipes here.)

    Is there a way to use more bacon?

    I haven’t tried it, but you could easily cook a third strip of bacon in the initial stages of this. Crumble that and use two of the strips in the batter while sprinkling the remaining bacon on top of the bars before baking.

    Ingredients
     

    • ½ cup unsalted butter softened
    • 1 cup light brown sugar
    • 1 egg
    • 1 teaspoon pure vanilla extract
    • ¼ cup bourbon
    • ½ cup creamy peanut butter unsweetened (if at all possible!)
    • 1 cup all-purpose flour
    • 2 tablespoons bacon cooked and chopped into small pieces (about 2 slices)
    • 1 cup chopped mini pretzels
    • 16 mini pretzels for decorating

    Instructions
     

    • Preheat the oven to 350°F. Spray a 9"x9" baking dish with nonstick baking spray, and set aside.
    • Cream together ½ cup unsalted butter and 1 cup light brown sugar in a large mixing bowl. You can use either a stand mixer or a hand mixer to accomplish this.
    • Break 1 egg into a separate bowl. Pour into the creamed butter and sugar. Measure in 1 teaspoon pure vanilla extract, and beat with the mixer until combined.
    • Pour in ¼ cup bourbon, and mix until it is completely incorporated into the batter.
    • Measure in ½ cup creamy peanut butter, then mix until smooth. 
    • Sprinkle in 1 cup all-purpose flour, and mix until combined.
    • If you haven't already, break/chop the pretzels. (We used our hands for this step, but you could also put them into a plastic bag and smack them with a rolling pin or a tenderizer to get them all crumbly.)
    • Using a rubber spatula, fold 2 tablespoons bacon and 1 cup chopped mini pretzels into the batter. Folding them in will ensure they don't break up too much or lose their crunchy texture.
    • Pour the batter into the prepared baking pan, and spread until evenly distributed.
    • Place the 16 mini pretzels on the top of the batter and gently press them into the mixture to ensure the pretzels to stick.
    • In the preheated oven, bake for 20 minutes or until the middle is set and a toothpick comes out nearly clean.
    • When they are cooked through, remove from the oven, and let cool completely on a wire rack.
    • Cut with a sharp knife, then store and/or enjoy.

    Notes

    Store in an airtight container in the refrigerator for 4-5 days.

    1. I love that you love these!! And all the tips about dairy and gluten free are amazing! I don’t usually worry about those things, just how much bourbon I can add to them without ruining them. SO glad you liked them and I can’t wait to try your Paloma Citrus Cake because I want to make enough of the tequila lime glaze to drink it after I top the cake with it!
