Vegan Thin Mint Smoothie

Mint and chocolate together are ALWAYS a good idea… especially for breakfast! Start your morning with a delightfully minty Vegan Thin Mint Smoothie. This smoothie is perfect for St. Patrick’s Day, as well as an afternoon pick-me-up. Blend non-dairy milk, vegan chocolate protein powder, peppermint extract, spinach and ice together, then serve. This flavorful breakfast smoothie is well-loved by vegans and non-vegans alike and makes a tasty meal!

I’ve been a smoothie girl for a while now, but I’m always on the lookout for a different flavor.

While I adore my spinach strawberry breakfast smoothies most days, I like to shake things up with my routine. Which is why I’ll occasionally make a citrus smoothie or an apple pie smoothie.

So a few weeks back, I wondered if I could make a smoothie that tasted like a cookie.

    The Girl Scouts have been combing our neighborhood for weeks now, selling cookies that I have a hard time turning down.

    While I’ve gotten my hands on a few boxes, I’ve tried to show restraint because I can eat an entire box in one sitting.

    And my favorite this year have been Thin Mints… frozen, of course.

    So one morning, I decided it was go time. I had peppermint extract, chocolate protein powder and spinach. Why not try to make a Thin Mint Smoothie?

    That morning, I whipped up a vegan rendition for myself and a non-vegan rendition for my daughter and nanny.

    While my initial attempt was too minty (trust me on this, y’all!), the second attempt was just right. Those smoothies were guzzled in no time, and my daughter tried to drink an entire portion because she loved it so much.

    So this smoothie is well-loved by adults and kiddos, vegans and non-vegans alike.

    This smoothie would make a perfect breakfast for tomorrow, but that’s certainly not the only time you can enjoy this goodness.

    I’ve been starting my days with one of these beauties for the last week, and the minty chocolate combination just makes me so happy. You’d never know it was actually BREAKFAST… and it’s definitely healthier than a cookie to start the day!

    Vegan Thin Mint Smoothie

    Prep Time: 5 minutes
    Total Time: 5 minutes

This smoothie is perfect for St. Patrick's Day, as well as an afternoon pick-me-up. Blend non-dairy milk, vegan chocolate protein powder, peppermint extract, spinach and ice together, then serve. This flavorful breakfast smoothie is well-loved by vegans and non-vegans alike and makes a tasty meal!

    Ingredients

    • 1 cup unsweetened vanilla cashew milk
    • ½ teaspoon pure peppermint extract
    • 1 cup fresh spinach
    • ½ cup ice
    • 3 tablespoons vegan chocolate protein powder

    Instructions

    1. In the base of a blender, combine the non-dairy milk, peppermint extract, spinach, ice and protein powder.
    2. Turn the blender on high, and blend until smooth.
    3. Pour into a glass, and enjoy immediately.

    Notes

    Not vegan and want to use some different ingredients? Add your favorite dairy milk and a teaspoon of vanilla extract to the blender in place of the unsweetened vanilla non-dairy milk. You can also use regular chocolate protein powder in this, as well.

    If you want to make more than one, you can double or triple this recipe in your blender, so long as your blender has space!

    1. Thin mints were always my faaaaavorite as a kid, and I’m always game for minty anything. I love using fresh mint or mint extract in my smoothies, so I’mmuh have to try this asap! So fresh and pretty!
