    This Shrimp Spinach Artichoke Dip was actually made and photographed last summer. Our daughter loved it – this kid’s palate is unbelievable, y’all – and the entire bowl of dip was consumed before July 4th festivities began.

    However, just because we made this during the summertime doesn’t mean it’s not good for winter, too.

    Creamy, gooey and delicious, it’s the perfect year-round appetizer. It cooks on the stovetop, so it’s perfect indoors or outdoors. (You know, in case you’ve got some tailgating to do and want to heat it up on your grill!)

    It’s a fun spin on a well-loved appetizer… assuming you’re into shrimp.

    If you have a shellfish allergy, skip this dip or make it sans shrimp. We don’t need any allergic reactions.

    If you’re not super into spinach or artichokes, this might not be your fave.

    Ingredients

    • ½ lb. shrimp, peeled and deveined
    • 1 tablespoon unsalted butter
    • Kosher salt and freshly ground black pepper, to taste
    • 10 oz. frozen chopped spinach
    • 12 oz. marinated artichoke hearts, chopped
    • 2 garlic cloves, , minced
    • 8 oz. cream cheese, softened
    • 1 cup parmesan, shredded
    • Tortilla or pita chips, for serving

    Instructions

    Cook the Shrimp

    1. In a skillet, melt the butter, then add the raw shrimp. Season with salt and pepper.
    2. Cook the shrimp until pink, then remove from the pan, and set aside.

    Make the Dip

    1. In a microwaveable bowl, cook the frozen chopped spinach to the packaging’s instructions, then let cool, drain, and set aside.
    2. Pour off the marinade from the artichokes, and chop.
    3. In a saucepan over medium-high, add the chopped artichoke hearts and garlic cloves. Sauté together until fragrant, about 1-2 minutes.
    4. Add the cream cheese and spinach, stirring as the ingredients meld together. When the cream cheese is almost entirely melted, add the shrimp and the parmesan.
    5. Remove the saucepan from the heat, and stir until the parmesan melts.
    6. Transfer to a serving dish, and enjoy warm with chips.
