Peach Nectar
2 ½lbs.peachespeeled and sliced
1cupgranulated sugar
Popsicles
1cuppeach nectar
6oz.Greek yogurt
1peachsliced
Instructions
Add 2 ½ lbs. peaches that have been sliced and peeled and 1 cup granulated sugar in a large bowl. Let macerate at room temperature for one hour.
Strain and save the juice from the peaches, and set aside. This is the peach nectar. Use the peaches for a pie or another baked good, or eat them by themselves. (Trust me... they're goooooood.)
In a medium-sized bowl, whisk together 1 cup peach nectar and 6 oz. Greek yogurt until smooth. Slice 1 peach into bite-sized pieces.
Place peach slices into the popsicle mold.
Pour the peaches and cream mixture into popsicle molds. (Mine made 8 popsicles!)
Freeze for 1 hour, then add the popsicle sticks. Freeze for an additional 4-6 hours, or until the popsicles are frozen through, then enjoy!
