This twist on classic home fries makes for the perfect side dish, can be made in advance and is super delicious for a crowd! Brown butter with fresh sage in a skillet. When the sage has crisped, break it apart, then add diced russet potatoes. Cook until fork tender and crisp on the outside. Serve warm as the perfect holiday (or anytime!) brunch side!

Ingredients
3small russet potatoesscrubbed, peeled and cut into ½” cubes (about 3 ½ cups when cut)
In a large nonstick skillet, heat the butter over medium heat. Add the sage, and let the two cook.
When the sage begins to crisp up and the butter begins browning, break the sage into tiny bits.
Add the diced potatoes and seasoning.
Cooking over medium heat, move the potatoes occasionally so they all are able to brown in the browned butter mixture. This should take 20-30 minutes, depending on the heat and your stovetop.
Serve warm with additional crispy sage, and enjoy!
Notes
These home fries could be made a few days in advance and heated in the oven. Heat at 250°F for 15-25 minutes to warm through and crisp the outsides of the potatoes. (They will become softer in the refrigerator.) Keep an eye on them, as you don't want them to burn.
