Add 4 oz. cream cheese and ¼ cup mayonnaise to a bowl. Stir together vigorously or use a hand mixer to really mix them together well.
Season with ½ teaspoon onion powder, ½ teaspoon garlic powder¼ teaspoon paprika and ¾ teaspoon celery salt. Stir to combine.
Add 3 tablespoons chopped pimentos and 1 tablespoon pimento juice/brine. Stir to combine. If you add a little too much juice, the mixture will feel really “wet.” This is OK – but you will need to refrigerate it to firm it up before serving.
Add 3 cups shredded sharp cheddar cheese to the mixture, and stir until just combined.
Serve immediately or chill, then serve when desired.
Notes
This recipe makes 2 ½ cups total of pimento cheese. How to store: Store in the refrigerator for 4-5 days in an airtight container. This recipe does not freeze well due to the mayonnaise and will thaw out weirdly.
