1lb.Brussels sproutstrimmed
2tablespoonsextra virgin olive oil
1tablespoonbalsamic vinegar
½teaspoonkosher salt
¼teaspoonfreshly ground black pepper
2prosciutto sliceschopped
¼cupParmesan cheesefor sprinkling
Instructions
Preheat the oven to 400°F.
Trim the Brussels sprouts, removing any stems and loose leaves.
Add the trimmed Brussels sprouts in a large bowl. Measure in the olive oil, balsamic vinegar, salt and pepper and toss to combine.
Spread the seasoned Brussels sprouts onto a rimmed sheet pan or jelly roll pan. Top with the sliced prosciutto.
Bake in the preheated oven for 30-35 minutes, or until the Brussels sprouts are golden brown and fork tender.
Remove the Brussels sprouts from the oven, and shred the parmesan cheese directly on top of them.
