Colorful, sweet and a little salty, this Easter Snack Chex Mix is perfect for sharing and festive for any kind of Easter gathering this spring! All you need are 8 ingredients, including Cadbury Mini Chocolate Eggs, to make this kid-friendly treat that's sometimes called Bunny Bait.
Toss together the Chex cereal, Cheerios, pretzels and the peanuts in an extra large mixing bowl.
Pour the mix onto a large rimmed baking sheet.
Sprinkle half (1 bag) of the Cadbury mini eggs on top of the mixture.
Melt the white chocolate melting chips. Place the chips in a microwave safe-bowl and heat on high power for 60 seconds. Stir well to finish melting and smoothing out the chocolate. (If any large chunks remain, melt for another 15 seconds and stir, stir, stir until the chocolate is melted and smooth. Keep an eye on it because white chocolate burns easily.)
Drizzle the melted white chocolate over the cereal mixture immediately.
Sprinkle the sprinkles on top of the white chocolate to ensure it sticks.
Use a spoon, rubber spatula or clean hands to mix and toss the mixture to evenly distribute the white chocolate before it sets. Work quickly because the chocolate sets up faster than you might imagine.
Sprinkle on the additional mini eggs.
Melt the candy melts in a bowl in the microwave. Place them in a microwave safe-bowl and heat on high power for 60 seconds. Stir well to finish melting and smoothing out the chocolate. (If any large chunks remain, melt for another 15 seconds and stir, stir, stir until the melts are smooth. If they’re thick, consider adding 1-2 tablespoons of a neutral oil to thin them out for drizzling.)
Once melted, transfer the candy melts into a pastry bag and drizzle on top of the snack mix.
Let sit for 15-20 minutes so that the white chocolate and the candy melts can finish cooling and setting.
Use your hands to break up any large chunks of the mixture.
Transfer to a large serving bowl, and enjoy!

How to store: Store leftover chex mix in an airtight container on the counter for up to a week.How to share: Scoop 1-2 cup servings of the dessert mix into individual baggies.
