3cupsbaby spinach3 oz.
½cupblueberries100g
¼cuptoasted pecans30g
2tablespoonsfeta cheese30g
4oz.shredded rotisserie chickenoptional
Blueberry Vinaigrette
2tablespoonsextra virgin olive oil
1tablespoonapple cider vinegar
2teaspoonsfreshly squeezed lemon juice
1tablespoonhoney
¼cupblueberries50g
Salt and pepperto taste
Instructions
Make the Vinaigrette
Combine the olive oil, vinegar, lemon juice, honey and blueberries in a food processor or blender.
Blend until smooth, about 1-2 minutes.
Give the dressing a taste. Add the salt and pepper, if necessary, then set aside.
Make the Salad
Combine the spinach, blueberries, pecans, feta and chicken in a large mixing bowl or salad bowl.
