Andouille Sausage Breakfast Tacos are the BEST dish to wake up to! Break down the andouille sausage and cook it in a saucepan until cooked through. Once the sausage is crumbly and delicious, add onion, sweet peppers and a jalapeño to the pan until they soften. Remove them from the pan, and scramble the eggs in the same skillet. These tacos add some much-needed heat to the breakfast or brunch table.
Remove the sausage from the casings (or dice), and add to a large skillet over medium-high heat.
While the sausage is cooking, dice the onion, sweet peppers and jalapeño. Set aside.
Break the eggs into a bowl, whipping together with a fork. Season with the Tony's, salt and pepper. Set aside.
Once the sausage is cooked through, add the onion and peppers to the pan. Cook until the veggies have softened slightly.
Pour in the eggs, stirring lightly every few moments to scrape the cooked eggs off the bottom of the pan. Continue cooking until the eggs are scrambled to your desired consistency.
Measure out the filling into the warmed flour tortillas, and enjoy warm!
Notes
I've encountered TWO types of andouille sausage. Both can work in this recipe. Either take the ground kind out of its casing and cook like you would taco meat OR dice a smoked andouille sausage into ½" pieces.
