Instructions
Make the Cinnamon-Infused Simple Syrup
Measure out the water and sugar into a heavy-bottomed saucepan. Bring to a boil, then remove from the heat.
Add in the cinnamon sticks, and cover for 30 minutes to three hours. (The longer the simple syrup infuses, the more cinnamon-y it will become. Proceed with caution.)
When the syrup has finished infusing (and tastes good to you!), strain and pour into a mason jar. Refrigerate until time to make cocktails.
Make the Peach Moscow Mule
Puree a peach in a blender. (If you don’t have a peach and can’t find good ones, feel free to use peach nectar instead! The puree will be thicker, but nectar provides the awesome peachy flavor we’re looking for.)
Measure the peach puree/nectar, ginger beer, vodka, lime juice and cinnamon simple syrup into a copper mug (or your favorite glassware of choice).
Use a spoon to stir up the ingredients until they are combined.
Top with ice, and enjoy immediately.
Notes
Cinnamon-Infused Simple Syrup recipe makes enough for 8 Peach Moscow Mules. You can use peach nectar OR frozen peaches in this drink if fresh peaches are unavailable. Canned peaches, without their syrup, would also work.Easy entertaining tip: The cinnamon-infused simple syrup and the peach puree can be made well in advance of your gathering. While I like to mix each drink individually, you could very easily turn this into a pitcher drink if you’re hosting a crowd. Double, triple, quadruple the recipe to your heart’s desire. Instead of using ice cubes, use frozen peach slices (purchased in your grocery store’s frozen section) instead so the drink doesn’t get diluted throughout your gathering.
