Real talk: I’ve been saving this dish to share with y’all for months… and then I got pregnant and my tastebuds aren’t appreciating it quite as much as I did pre-pregnancy.

Disappointing, right?

That being said, I can attest that this quick lunch or dinner is mighty delicious if you’re not pregnant and/or have a weird aversion to eggs and somewhat wilt-y spinach.

Basically, this boils down to a sweet potato topped with fresh spinach, baked bacon and a fried egg.

    Ooh, this looks amazing (and it sounds like it comes together so quickly :). It’s a bummer your pregnancy taste buds don’t appreciate it quite as much as they did but hopefully that will change post-bebe!
