Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu, as always, is delicious and eclectic. It’s also pantry-friendly, in case you’re unable to make it to the store.
In addition to five scrumptious dinners for each weeknight, we’ve got fun appetizer that you can share with the whole family. There is also a fun cookie recipe that’s dairy and egg free. The recipe also has a ton of substitutions, so you will (hopefully) have the ingredients on hand to make them.
What is the weekly meal plan?
Every Friday, I share a new menu plan here that always includes FIVE dinner options and TWO extras. This menu is curated by me and a few friends, and we call ourselves the Dinner Divas because, well, that’s what we do.
Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks and more.
We hope this weekly menu helps you create your shopping list and prepare for the week ahead, as well as provide inspiration. And hey, if it makes your life a little easier, too, we’re thrilled to help!

Monday's Dinner: Ginger Chili Chicken Thighs
These keto chicken thighs could not be easier to make, whether or not you're living a keto lifestyle right now. (Let's be honest: I'm not, but we love to switch things up in our house from time to time and meal to meal!) Serve these gingery, chili-y thighs with your favorite side and call it a meal.
Tuesday's Dinner: Grilled Pork Steak
Who doesn't LOVE a pork steak from the grill? This recipe is as easy as it can be, and since the weather's getting nicer (hopefully) where we all live, it's time to start grilling! Pair it with a favorite side of whatever you've got on hand, and enjoy.
Wednesday's Dinner: Spicy Chili Cheese Dip
Let's use this homemade Chili Cheese Dip to make NACHOS! Layer your favorite tortilla chips (or even tortillas!) with beans or meat, then slather on this dip. Sprinkle with extra spices, onions, bell peppers, cilantro--whatever you've got on hand--and enjoy!
Thursday's Dinner: Chicken and Sausage Jambalaya
Jambalaya has become a weekly occurrence at our house because we love rice dishes. So if you've got rice, some sort of meat (though we recommend chicken and sausage--but you could do it with just chicken or just sausage), bell pepper and onion (and maybe celery, too), you're gold. It all cooks up in one pot and doesn't require babysitting once you put it on simmer.
Friday's Dinner: Linguine with Roast Chicken and Pine Nuts
I love a good pasta night, and this "fancier" pasta dish, which includes roasted chicken and pine nuts, is utterly fantastic! Not only does this dish elevate a Friday night meal, but it's also pretty darn easy to make, too. You can't lose with this one!
Appetizer Idea: The Best Beer Cheese Sauce for Pretzels
Trying your hand at homemade pretzels or score some at the store the last time you visited? You've GOTTA make this beer cheese! A delicious dip that's perfect for a movie night or an afternoon snack, this is a wonderful treat.
Dessert Idea: Egg Free, Dairy Free Dark Chocolate Chip Cookies
Truly, these cookies have become one of our favorite things about our sheltering-in-place these days. Why? There are SO many substitutions for this recipe, and they're easy to make, and assuming you have flour and chocolate chips, you proooobably have the rest of the ingredients (or substitutes!), too.
Pro tip: Make a batch and freeze half of 'em for later.
