Welcome to this week’s Dinner Divas Weekly Meal Plan! Our menu for you this week is delicious and versatile. We’ve got a comforting bake to start off the week, a twist on the classic pasta salad, a chili with mostly pantry ingredients and more. We’ve even got a special weekend breakfast and a chocolate lover’s dream dessert, too.
What is the weekly meal plan?
Every Friday, I share a new menu plan here that always includes FIVE dinner options and TWO extras. This menu is curated by me and a few friends, and we call ourselves the Dinner Divas because, well, that’s what we do.
Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks and more.

I don't know about you, but I'm in the market for some EASY recipes to make my whole family these days. This dish is the perfect way to start the week, requiring just one pan, FIVE ingredients and about 40 minutes total. The question is... will you have leftovers? My guess is no. 😉
You might have the majority of these ingredients in your pantry already! Calling for canned chickpeas, hummus, salsa, peppers and spices, this vegan chili is bursting with flavor and PERFECT for a Wednesday night dinner. Serve it with your favorite chili sides and toppings for the ultimate comforting meal.
This twist on a pasta salad--which includes TACO INGREDIENTS--is pretty brilliant, and my entire family has loved this dish every time we've made it. If you don't have the fresh ingredients on hand, you can use canned corn, cherries and peppers. Just be sure to toss it in that dressing for the wonderful sauciness!
Baked Corvina sounds fancy, but it's actually so easy to make! Calling for fresh ingredients, this fish dish makes Friday night's meal a little fancier. And I don't know about you, but I love the idea of having something a little fancier to look forward to these days.
CHOCOLATE Chess Pie is the stuff dreams are made of... and you might have all the ingredients on hand if you're a baker at heart! Calling for simple, pantry staples, this pie is a classic for a reason and a great baked good to make and bake with the family. Get the kids involved in the making of this pie, too! They'll love it.
We're total suckers for pancakes and waffles during the weekends. These waffles are something special, though, and they're fun to make with your kids. Everyone gets a job, and everyone helps... then top the final waffles with sliced (or frozen) strawberries and sweetened evaporated milk for the ultimate decadent breakfast.
