Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu, as always, is delicious.
We’re serving up a some lemony goodness, as well as some vegetarian meals for you, too. We also have a St. Patrick’s Day dessert that will make you drool AND a wonderful savory bread recipe that pairs beautifully with any of the recipes from this week’s menu.
What is the weekly meal plan?
Every Friday, I share a new menu plan here that always includes FIVE dinner options and TWO extras. This menu is curated by me and a few friends, and we call ourselves the Dinner Divas because, well, that’s what we do.
Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks and more.

Monday's Dinner: Lemony Garlic Lentil Soup with Feta
This lentil soup is chock full of the comforting flavors we all know and love when we're feeling under the weather (or when the weather is chilly and miserable.) This soup is a big 'ol bowl of comfort, and it's going to be an amazing way to start the week, especially since it calls for both LEMON and FETA!
Tuesday's Dinner: Vegan Vanilla Chai Pancakes
Who doesn't love breakfast for dinner? These VEGAN pancakes call for vanilla and chai flavors, and they are so wonderfully delicious that no one will know they're vegan!
Wednesday's Dinner: Lemon Salmon Pasta
This pasta is one of our family's favorite dishes because it's easy peasy to make and also because you get a LOT of colors in one bowl! Our kids love it, too, and really, that's the best kind of meal.
Thursday's Dinner: Sweet Potato and Beet Fritters
Sweet potatoes and beets in fritter form? YUM. What a combination! Pair 'em with a Cumin Lime Dipping Sauce for the ultimate wow factor. This vegetarian dinner is super colorful AND flavorful!
Friday's Dinner: Moroccan Roasted Veggie Power Bowls
I love me a bowl of any sort, and these Moroccan ones include nourishing vegetables seasoned with harissa for a nutritional boost. Serve with lentils, leafy greens, onion, cheese and other toppings for a delightfully simple and delicious Friday night meal.
Bread Recipe: Potato Cheese Rolls
How great are these cheesy rolls made with POTATOES?!? I love that this recipe could go with any of our dinners this week and know they would be a fabulous addition any night. The question is: What night are you making 'em?
Dessert Recipe: Chocolate Chip Irish Cream Pound Cake
In case you're preparing for St. Patrick's Day and want to do some test baking, let me implore you to try this pound cake. Yes, it's got Irish cream inside it. Yes, it has an Irish cream glaze. Yes, it's divine and 100% advisable to make for this year's festivities.
