What is the weekly meal plan?
Every Friday, I share a new menu plan here that always includes FIVE dinner options and TWO extras. This menu is curated by me and a few friends, and we call ourselves the Dinner Divas because, well, that’s what we do.
Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks and more.

Monday's Dinner: Slow Cooker Chicken Tortellini Soup
Start the week off on a solid, easy note with this SLOW COOKER soup! Throw the ingredients in before you leave for work (or before your day starts with the kids.) When you come home, add the tortellini to finish up, and dinner's done in 15. Our whole family, kids included, adored this soup the last time we make it, and we have it in rotation for the rest of the winter because of this.
Tuesday's Dinner: Thai Curry Shrimp with Coconut Milk
Have you ever made Thai food at home? I haven't, but Pook's Pantry makes it easy for us with her Thai Curry Shrimp! Not only are they gorgeous, but they're bursting with flavors, too. Serve with rice or noodles, and dinner is served in no time!
Wednesday's Dinner: 15-Minute Weeknight Pasta
Who doesn't love PASTA? And who doesn't love a dinner that's ready in 15 minutes? Comfortably Domestic is making dreams come true with Wednesday's dinner, and I, for one, cannot wait.
Thursday's Dinner: Low Carb Cajun Style Sausage with Cauliflower Rice
Whether or not you live the low carb lifestyle, we can all agree that this Cajun Style Sausage has a TON of flavor! And since it's served with cauliflower rice, you're getting another serving of veggies to end your way with. And that, to me, sounds pretty darn delicious.
Friday's Dinner: Turkey Spinach Meatball Subs
Friday night, we're making HOMEMADE MEATBALL SUBS! I loved the subs like this at our local sandwich shop growing up and decided to make 'em at home with turkey meatballs. As an added bonus, I threw in some spinach for more veggies, and these have become a staple. My sister calls them "the best meatballs ever" and that's saying something since our mom's meatballs are truly the best.
Dessert Idea #1: Chocolate Cream French Silk Pie
We need to try some desserts in preparation for Valentine's Day, right? This Chocolate Cream French Silk Pie is a dreamy, creamy pie that will not last long because YUM. If you're a chocoholic, this is for you!
