Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is delicious. We’re serving up fall flavors, stew and a chicken dish that’s perfect for the whole family… and that provides leftovers for another meal this week, too! Also, we’ve got TWO Halloween cookie recipes that are perfect for sharing.
What is the weekly meal plan?
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Slow Cooker Whole Roasted Chicken
We love slow cooker meals at our house because, well, let's be real: Getting dinner cooked hot every night and on the table before the kids are in bed is a challenge, and the slow cooker makes it to where I'm less harried. I love the sound of this roasted chicken because of that. Throw in some veggies with it, and you're gold for dinner!
Tuesday's Dinner: Small Batch Ballymaloe Irish Stew
Have you ever tried Ballymaloe Irish Stew? I haven't, but my goodness, does it sound amazing. And since this is a small batch recipe, you won't be eating it for the rest of the week! (As someone who only likes leftovers so much, that's important for me.) What will you serve yours with?
Wednesday's Dinner: Apple Cider Pulled Pork with Apple Cabbage Slaw
This pulled pork is another dish you can make in the slow cooker or you can make it faster in the Instant Pot. Either way, it's delightful. When it's done, shred the pork and serve it on a bun with a homemade apple cabbage slaw. PERFECT for a fall dinner!
Thursday's Dinner: Garlic Butter Langostino
I'm drooling just reading the words Garlic Butter Langostino because holy cow, garlic and butter and LOBSTER together? How can you go wrong? Serve it with some bread to sop up that garlic butter and a steamed veggie, and you're good to go!
Friday's Dinner: Mango Chicken Quesadillas with Brie
Use leftovers from your roasted chicken on Monday to make these MANGO chicken 'dillas! Obviously, this isn't our traditional pizza for Friday night, but it's equally cheesy and utterly delicious for the whole fam!
