Welcome to this week’s Dinner Divas Weekly Meal Plan! As always, this week’s menu is delicious.
We’ve got several easy summertime dinners that are ready in a snap, as well as a decadent pizza to finish off the week. And then our two extra recipes this week… well… how could we NOT be excited about homemade ice cream sandwiches and a chutney featuring a summertime fruit?
What is this weekly meal plan?
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.
We hope this weekly menu helps you create your shopping list and prepare for the week ahead, as well as provide inspiration. And hey, if it makes your life a little easier, too, we’re thrilled to help!

Monday's Dinner: Turkey Scaloppini
A little different than a traditional scaloppini, this TURKEY one is utterly delightful and perfect for a quick weeknight dinner. Paired with rice or potatoes and steamed veggies, you've got a flavorful dinner. Don't forget the bread to sop up that gravy, too!
Tuesday's Dinner: Rosemary Lemon Chicken Thighs
Try saying Rosemary Lemon Chicken Thighs three times fast. 🙂 OK, kidding. But in all seriousness, these chicken thighs sound insanely flavorful and delicious and like the perfect kind of entree. Pair 'em with a salad or your favorite veggie, and dinner is made in the shade!
Wednesday's Dinner: Light Chicken Salad with Lemon Dill Yogurt Dressing
I'm a sucker for chicken salad, but I rarely make it. That's changing this week, and for good reason: this Light Chicken Salad with Lemon Dill Yogurt Dressing is easy peasy, light and a fabulous summertime dinner. Served on a bun or in a bed of greens, it's exactly what we need for Wednesday.
Thursday's Dinner: North Carolina Muffaletta
I've never heard of a North Carolina Muffaletta before... but that doesn't mean it's something we won't love. While it varies from the New Orleans version that's well-known and loved, it has a flavorful veggie salad (instead of an olive salad) that I am TOTALLY here for!
Friday's Dinner: BBQ Pulled Pork Pizza
Fridays are for pizza... right? Use PULLED PORK atop your pizza crust this week for the ultimate decadence. I don't know about you, but I cannot wait to sink my teeth into a slice of this goodness!
Summer Condiment Idea: Cherry Chutney with Red Onion, Ginger and Whole Grain Mustard
Cherries are officially in season, and I love how versatile they are. Cheryl explains what a chutney is (and why it is different than a jam), as well as shares exactly how to make this with all the fresh cherries you've got on hand this season!
Dessert Idea: S'mores Ice Cream Sandwiches with Toasted Marshmallow Malt Ice Cream
I don't think I even need to SAY anything about this ice cream sandwich recipe to get y'all to try it because HOLY MOLY, look at that! I'm all in, and the fact that the ice cream is toasted marshmallow is blowing my mind!
