Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is delicious, and we’re making sure we make the most of grilling season. You know, before it gets too hot. We’ve also included a breakfast that serves as dinner that you can eat all by yourself and a cocktail that can easily be turned into a mocktail.
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Grilled Chicken Gyros
Y'all know I'm a sucker for any Mediterranean food, and these gyros are right up my alley! Not only are they topped with tomatoes and onions and tzatziki sauce, but they're grilled, too! Throw on some zucchini or potatoes to that grill... or make a Greek salad... and you've got a while dinner!
Tuesday's Dinner: Drunken Grandma Pizza
I don't know about you, but I want to make this Drunken Grandma Pizza based off the name alone! We love pizza at our house, so any kind of pizza is good pizza... and this one sounds absolutely delightful with the vodka sauce it calls for! Have you ever eaten a pizza like this before?
Wednesday's Dinner: Guacamole-Stuffed Fajita Burgers
I love, love, love a good burger, and these stuffed burgers--filled with guacamole and topped with fajita veggies like onions and peppers--are all kinds of amazing. The bonus is you can make 'em on a grill, a grill pan or even a skillet indoors.
Thursday's Dinner: Corvina Recipe with Coconut Curry Sauce
I don't know why this dish sounds *fancy* to me (because it's really not any more complicated than anything else on this week's menu), but it sounds that way. Probably because I never think to make a sauce with fish that we make during the week. That said, this recipe is bursting with flavor, and I cannot wait to try it!
Friday's Dinner: Grilled Steak Salad with Chive Yogurt Dressing
Happy Friday! Here's a Grilled Steak Salad, complete with a chive yogurt dressing! This gorgeous salad is the right way to start the weekend, and you can cook the meat to your desired temperature and add as much or as little of the dressing, too. How would you like yours?
Breakfast Option: Eggless Pancakes for One
All right. So technically, you could make these pancakes for yourself (and your family, if you feel like sharing) for breakfast OR dinner, and I wouldn't bat an eye. Because pancakes for dinner are delightful, obviously. Do you enjoy breakfast for dinner, too? Or are you more of a pancakes for breakfast kind of person?
Drink Option: Spiked Watermelon Limeade
Happy summer, y'all! This Spiked Watermelon Limeade is one of our favorite, favorite, favorite drinks for the summertime because YUM. And if you're not into boozy drinks or want to share with your kids, you can easily make this without the alcohol. It's delicious either way!
