Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is eclectic and tasty. And we’ve got a drink to brighten up your week, as well as a sweet treat that’s gonna get us through (and provide sweet inspiration for the warm months ahead.)
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Add some sweet heat to the week by making this TexMex-inspired beer can chicken. Rubbed with a chipotle lime butter and baked in the oven on a beer can, this chicken is hard to beat because it's full of flavor. Pair it with some rice and beans and sliced avocado, and you've got dinner covered! Who here is a meal prepper? I'm trying to get better about it because some nights, I just *don't* feel like cooking after a long day. These Mediterranean Meal Prep Lamb Meatballs are brilliant just for that... and the flavors they call forward sound AMAZING. Are you a lamb fan? These burgers are a perfectly seasoned blend of beef and pork and layered with sweet and spicy elements. Who's ready to throw one on the grill (or make it in the grill pan)? I am, I am! Pastry Chef Online has a secret to her brilliant Easy Creamy Vodka Sauce... and it's going to be one I keep in my pocket because I need easy dinners these days. Pasta is always a family favorite, so this is going to go over brilliantly for us! I know this Roasted Grape Bruschetta with Whipped Feta isn't a "traditional" dinner, but sometimes, it's nice to shake things up. And on a Friday night, I want something that's going to be easy and flavorful... and that I can enjoy with my husband or friends as we send the week off with a glass of wine. This bruschetta is perfect for that. Blueberry season is almost upon us, so we should definitely celebrate with Blueberry Spritzer with White Wine! I'm a sucker for any drink that calls for fresh fruits (hi, look at my drink archives), and this one is going to go into rotation as the weather continues heating up. I don't know why I never consider baking a pie, but my goodness, y'all, I need to fix that. This Vanilla Cream Pudding Pie from Comfortably Domestic sounds amazingly flavorful and perfect for the summer months ahead. Or, you know, this week.
