Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is delicious and eclectic. We’ve got a pizza for y’all, some poppable savory muffins, a slow cooker dish and more.
In case you’re new around these parts, I share a new menu plan here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Chicken and Zucchini Enchiladas
Y'all know we love TexMex food, so these Chicken and Zucchini Enchiladas are the perfect springy twist to get our week off to a strong start. Chock full of veggies and very easy to make vegetarian, these enchiladas are a family favorite. (You can also use jarred enchilada sauce if you don't want to make the sauce from scratch, even though it's easy peasy.)
Tuesday's Dinner: Sweet and Spicy Slow Cooker Chicken
Two of my favorite flavors--sweet and spicy--come together with a chicken dish that cooks entirely in the slow cooker. What is not to love about this combination of flavors AND ingredients?
Wednesday's Dinner: 30 Minute Cornmeal Pizza Dough
Heck yes! Pizza on a Wednesday! And not just any pizza--the homemade kind with a Cornmeal Pizza Dough. I'm really looking forward to trying this recipe from Comfortably Domestic because I never plan ahead enough to get my pizza dough rising in time...
Thursday's Dinner: Low Carb Lasagna with Cauliflower Noodles
I don't do the whole low carb lifestyle thing, but I always enjoy making dishes and learning about different ways to cook. And I absolutely LOVE how Pastry Chef Online used cauliflower to make her noodles in this lasagna! And I cannot wait to try it because cauliflower and cheese and marinara sounds super YUMMY together!
Friday's Dinner: Corn Dog Mini Muffins
Celebrate the impending weekend by baking up some Corn Dog Mini Muffins! These muffins remind me of the fair, and they're always a hit in our house because they're super fun to dip. Have you ever made something like this? Do you think your family would be into these mini muffins, too?
Drink Option: Strawberry Spritzer Recipe with Rosé Wine
OMG, y'all. Pook's Pantry is bringing the springtime flavors with her Strawberry Spritzer! And not only is it a spritzer, but she's made it using rosé, and THAT makes me incredibly happy! What's your go-to drink during the springtime? Do you think you'd dig this? I know I will!

Holy cow, y'all. I cannot wait to try this Salted Caramel Chocolate Tart from Comfortably Domestic. She tells me it's basically like a Twix in pie form, and I don't know about you, but I am ALL in!
