Blueberry Cheesecake Popsicles

Once upon a time, I was a newspaper photographer at a small town’s newspaper in South Mississippi.

One weekend in June, I was sent to cover a Blueberry Festival.

Not knowing what to expect, I packed up my gear, my trusty reporter’s notebook and myself and headed south, ready for whatever adventure found me along the way.

    That day, I learned that you can add blueberries to most any food, and it will be delightful!

    Blueberry cornbread? Oh yeah! Savory-sweet baked goods are the best.

    Blueberry hand pies? Perfect for munching as you wander the streets, eyes wide open for images to capture.

    As a newspaper photographer, you’re always looking for your next shot, though you don’t know where it’s going to be or what it’s going to come from. So you walk around, vigilant, waiting to stumble upon it as you take in your surroundings.

    I loved this part of my job – discovering my town and its citizens through the lens.

    In all, I spent a few hours at the festival, photographing the pageant, as well as locals and tourists enjoying the booths, as well as the various blueberry vendors and farmers.

    And on my way back to the office, I picked up the most magical cobbler of my life, as well as 10 lbs. of fresh berries.

    Because blueberries!

    If I were to go back to Mississippi and become a vendor at that festival, I’d offer these Blueberry Cheesecake Popsicles.

    In my opinion, blueberries and cheesecake together are a fabulous combination! Especially in the summertime.

    It should come as no surprise that I’m a little popsicle-obsessed in the summertime. And since I’m always on the lookout for a fabulous sweet treat to cool down with as the afternoons get longer, popsicles have become my go-to.

    Since it’s blueberry season, I wanted to highlight the freshness of the season.

    I headed on over to my local Walmart to pick up a few supplies to make these popsicles.

    First, I needed to get the base of these popsicles. On the dairy aisle, I picked up Dannon Light & Fit Greek Yogurt in blueberry and vanilla. (And right now, you can use this coupon to buy 3 and get $1 off!)

    We love these 5.3 oz. single serve yogurts in our house – as both a quick, easy breakfast and a snack – but I wanted to turn them into an afternoon treat instead of us just eating them out of the single serve carton. Dannon Light & Fit Greek Yogurt is smooth and creamy and nonfat. At only 80 calories per serving with 12 grams of protein, this yogurt is perfect for our lifestyle.

    Added bonus: I didn’t add sugar or sweeteners because the yogurt and blueberries and vanilla wafer cookie crumbles have all the sweetness we need! WIN!

    Once I had my yogurt in hand, I headed down the cookie aisle for some vanilla wafer cookies. Then I jetted over to the produce section for a carton of fresh blueberries and a lemon.

    That’s it!

    When I got home, I threw the blueberries on a baking sheet and roasted them.

    Why? Because I love how they just BURST with flavor when warmed through.

    And when swirled into the Dannon Light & Fit Greek Yogurt, combined with a little lemon juice and zest and those cookie crumbles?

    MAGIC.

    These popsicles are creamy and tart, with the natural sweetness of the blueberries, as well as the zip of the lemon, and a little added crunch of the vanilla wafer cookies.

    Blueberry Cheesecake Popsicles

    Prep Time: 25 minutes
    Cook Time: 15 minutes
    Freeze Time: 6 hours
    Total Time: 6 hours 40 minutes

    Step up your summertime dessert game by making Blueberry Cheesecake Popsicles! These creamy popsicles start with a base of Dannon® Light & Fit Greek® Yogurt. Swirl the blueberry and vanilla yogurts together, then combine with juicy, roasted blueberries, vanilla wafer crumbles and lemon zest and juice. Freeze for 4-6 hours, then dip in additional wafer crumbles for the perfect summertime sweet! The whole family is going to love these popsicles!

    Ingredients

    • 10.6 oz. Dannon Light & Fit Greek Blueberry Yogurt
    • 10.6 oz. Dannon Light & Fit Greek Vanilla Yogurt
    • 1 pint blueberries
    • A pinch of kosher salt, to taste
    • 1 lemon, zested
    • 1 lemon, juiced (about 2 tablespoons)
    • ½ cup vanilla wafer cookies, crumbled, plus additional for the frozen popsicles

    Instructions

    Roast the Blueberries

    1. Preheat the oven to 375°F. Line a baking sheet with parchment paper, and set aside.
    2. Rinse the blueberries thoroughly, then scatter over the prepared baking sheet. Sprinkle with a pinch of salt.
    3. Bake for 15-20 minutes, or until the blueberries have burst and are very juicy.
    4. Set aside and let cool to room temperature.

    Prepare the Popsicles

    1. In a large glass bowl, scoop out the two Dannon Light & Fit Greek Blueberry Yogurt single serve containers. Add one of the Dannon Light & Fit Greek Vanilla Yogurt single serve containers, too.
    2. Measure in the lemon zest, lemon juice and vanilla wafer cookies.
    3. Add the blueberries to the bowl, and stir gently using a kitchen spatula.
    4. Once mostly combined, add the other Dannon Light & Fit Greek Vanilla Yogurt single serve container. Swirl in to the popsicle mixture for a more defined swirl.
    5. Using a spoon, carefully dollop the popsicle mixture into a popsicle mold.
    6. Insert the popsicle sticks, then transfer to the freezer. Freeze for 4-6 hours, or overnight.
    7. When the popsicles are frozen solid, remove from the freezer.
    8. Remove the popsicles from their molds and dip into additional vanilla wafer cookie crumbles, then enjoy!

    Notes

    Please note that the total time includes 4 hours of freeze time, though your popsicles might require more of this, depending on your freezer.
