Breakfast sandwiches are a go-to in our house, especially on weekend mornings. Because who doesn’t love a good breakfast sandwich?

We ate a ton of breakfast sandwiches and breakfast tacos in the months after my daughters were born. Those tacos were super easy to make and store, as well as eat.

My friend Natasha had her second child before I originally shared this post. As she was settling in to being a mother of two. I wanted to share a recipe that would be simple for her to make and enjoy.

So instead of making more breakfast tacos, I turned to another one of our favorite breakfast carbs: the croissant.

    Why I love this recipe:

    Croissants are so versatile! While we’re fans of schmearing (yes, schmearing) them with jams and marmalades, I wanted to prepare savory option that would provide some protein.

    After all, I’m all about fueling myself to chase after kids during breakfast and I wanted the same for my friend, Natasha.

    This Croissant Breakfast Sandwich recipe could not be easier to make in the morning, but it can be made in batch if you want to freeze some for later. And honestly, I highly recommend doing that if you’re a new parent or bringing something to a new parent.

    The croissant is crunchy and flaky. The turkey bacon is crisped to perfection. The soft scrambled egg is just so perfect and flavorful. And the cheese adds some sharpness and creaminess to the whole sandwich.

    All in all, this breakfast sandwich is utterly delicious and something that’s great for any occasion, be it a Saturday morning or even a holiday, like Father’s Day.

    Let’s talk ingredients!

    In addition to the tools above, you’re going to need some ingredients to make this recipe, too! Chances are, you might already have some of them in your fridge or pantry. Scroll down to the recipe card for the full measurements and instructions.

    Here are the ingredients you need to grab at the grocery store:

    • Buttery croissant — I grabbed a few fresh croissants from my favorite bakery, but you can also get them at the bakery section of the grocery. They do not need to be homemade. I do not recommend using frozen croissants for this recipe.
    • Egg — I soft scrambled these in melted butter with a little salt and black pepper, but you can cook your egg to a different specification, if desired. (I previously had made the egg over easy for this croissant sandwich before I made a batch of these more recently.)
    • Turkey bacon — we want this to be super crispy so that there’s a nice crunch on the sandwich. I find the best way to do this is to cook the bacon in the oven.
    • Extra sharp white cheddar cheese — or your favorite melty cheese for a sandwich. You can purchase pre-sliced cheese at most grocery stores or slice it from the block yourself.

    Variations on this egg croissant sandwich recipe:

    Swap out the meat. Use a breakfast sausage patty, pork bacon or even a slice of ham in place of the turkey bacon.

    Melt the cheese for the ultimate melty cheese breakfast sandwich. You can add the slices to the croissant before you toast it.

    Swap out the cheese. ​While my family loves cheddar, American cheese or Swiss cheese would be a great swap if you prefer!

    Add some heat. Add a dash of hot sauce to this delicious breakfast sandwich before serving.

    How to make a Savory Breakfast Sandwich with a Croissant

    I originally wrote this recipe for a single breakfast sandwich, but I have since expanded it to make several since batch making these sandwiches is easy!

    First thing’s first: toast the croissants until golden brownYou can do this in the oven or a toaster oven.

    I like place the halved croissants on a sheet pan lined with parchment paper and pop them in the oven until crispy. This is an easy way to add texture to these cheese croissant breakfast sandwiches.

    Cook the bacon. We use turkey bacon in this recipe. You can fry it in a skillet or bake it to crisp it up. I use this recipe to bake bacon. (The recipe works for turkey bacon, too, though you’ll need to give it a spritz of oil so it can crisp up.) Drain ’em on a paper towel.

    Cook the eggs. I made fluffy scrambled eggs. Break the egg(s) in a medium bowl. Season with salt and pepper and break the yolks with a fork, whisking well, and added a splash of half-and-half.

    Melt butter over high heat and when it’s bubbling, lower to medium heat (or medium low) and add the eggs. Constantly move the eggs around the pan with a rubber spatula until they are perfectly and softly scrambled. (They’ll look a little soft, as opposed to super firm!)

    You could also fry yours over easy so the yolk is runny or even hard scramble the eggs.


    Build the sandwich. Start with the slices of cheddar cheese on the bottom half of the croissants. Layer on the bacon and then pile on the soft scrambled eggs.

    Divide among the six croissants as evenly as you can.

    Bake these sandwich halves in a preheated oven for about 10-15 minutes, or until the cheese is melty and the croissants golden brown.

    Slice the sandwich and enjoy immediately!

    How to store and freeze:

    If you make a batch of these breakfast sammies and have leftovers, store in an airtight container in the refrigerator for 1-2 days. Reheat in the toaster oven or the microwave until ingredients are warmed through.

    If you want to make a batch for freezing, scramble the eggs and assemble the sandwiches as instructed. Wrap tightly in plastic wrap or aluminum foil and freeze for up to 3 months. Unwrap to reheat in the microwave, then toast in the toaster oven to crisp up the croissant. You could also reheat in the air fryer.

    Erin’s Easy Entertaining Tips

    Wouldn’t these crunchy breakfast croissants be an excellent addition to an at-home brunch? They go beautifully with Summer Fruit Salad, as well as Mimosas and Bloody Marys.

    Here are some things I’d do to make them for a crowd:

    • Batch toast and make the ingredients. This means toasting an entire sheet pan’s worth of croissants, as well as crisping up all the bacon. I like to cook larger batches of bacon in the oven for ease.
    • Scramble the eggs and form a little egg patty for each sandwich. This way, you won’t have to worry about frying eggs individually, which could become overwhelming.
    • Make all the ingredients and let guests assemble their own. Create a breakfast bar of sorts and let them build their own breakfast croissant sandwiches on a warm croissant.

    Ingredients
      

    • 6 croissants halved
    • 6 slices turkey bacon
    • 2 tablespons unsalted butter
    • 8 eggs
    • ¼ cup half and half
    • Kosher salt
    • Freshly ground black pepper
    • 6 slices extra sharp cheddar cheese

    Instructions
     

    • Preheat the oven to 350℉. Line a sheet pan with parchment paper and set aside.
    • Slice the croissant in half and place on the prepared sheet pan. Toast in the preheated oven for 5-10 minutes, or until golden brown. Keep an eye on it because you do not want it to get too toasted!
    • In a skillet or on another sheet pan in the oven, cook the turkey bacon until crisp.

    Soft scramble the eggs

    • Melt the butter in a skillet over high heat. You want it to completely melt and get bubbly and extremely hot.
    • Crack the eggs into a medium bowl. Pour in the half and half. Season with big pinches of salt and pepper.
    • Pour the eggs into the hot skillet with the butter. Immediately turn down the heat to medium, and begin stirring with a rubber spatula to break up the eggs as they cook.
    • When the eggs are a beautiful golden brown and still look a little soft (as opposed to super firm), remove the pan from the heat.

    Assemble the croissant breakfast sandwiches

    • Add a slice of cheese to the bottom of each toasted croissant. Leave them on the sheet pan because these will bake for a second time!
    • Add a strip of bacon to each croissant on top of the cheese.
    • Finally, divide the scrambled eggs evenly between the bottoms of the croissants.
    • Transfer back to the oven, and bake for 10-15 minutes or until everything is toasty and delicious. The cheese will begin melting down the sides of the croissants and that will tell you they're ready!
    • Once removing the sandwiches from the oven, enjoy immediately!
