Peppermint Brownie Cookies

I have a thing with combining peppermint and chocolate. I also have a thing with candy canes. And a thing about brownies, too.

These Peppermint Brownie Cookies combine all those aforementioned things into one delectable cookie.

My daughter’s nanny helped whip up these beauties when Lady Baby was napping (and I was working on the Cranberry Crumb Bar filling), and they’re quite the success!

    The cookies themselves taste divine on their own… but when you drizzle the peppermint icing over them, they’re taken to another level.

    A Christmas level, if you will.

    And then you sprinkle crushed candy canes on top of them for that extra peppermint goodness and sparkle. Because we all like sparkle.

    This cookie dough is an easy one. It doesn’t require chilling time, and you can bake the cookies once the dough has been made. The chocolate flavor is decadent and perfect for chocolate lovers.

    The only part that takes any significant amount of time is waiting for the cookies to bake… then waiting for them to cool enough so you can drizzle on that peppermint icing.

    I may or may not have gotten a little too enthusiastic and dolloped the icing on them too soon, resulting in the messy look.

    Hopefully, you have more patience than me. But if you don’t, I’m here to tell you they still taste fantastic! And I’m sure Santa won’t mind a messy-looking cookie as long as it tastes as scrumptious as this one.

    Let’s talk ingredients!

    In addition to the tools above, you’re going to need some ingredients to make this recipe, too! Chances are, you might already have some of them in your fridge or pantry. Scroll down to the recipe card for the full measurements and instructions.

    Here’s what you need:

    • Bittersweet chocolateyou may use chocolate chips or a bar, depending on your tastes. If using a bar, chop it up before melting!
    • Unsalted butter—normally, we’d want the butter to be softened to make cookies, but we’re melting this with the bittersweet chocolate.
    • Eggs—these help the cookie batter come together. We want them at room temperature.
    • Granulated sugar—also known as white sugar, this is the sweetener for our cookies. There is no substitute.
    • Peppermint extract—or Peppermint Vodka if you’re feeling fancy
    • Kosher salt—I like to use a medium-grain kosher salt. You could use the same size of a sea salt, too.
    • All-purpose flour—we keep unbleached AP flour in our house, but the regular kind works, too. We have not attempted to make this recipe with gluten free flours or other substitutes.
    • Powdered sugar—also known as confectioner’s sugar, this is the sugar of choice for the icing. There is no substitute.
    • Water—this will help bring the peppermint icing together.
    • Candy canes—you can crush them yourself or you can purchase peppermint pieces in a bag, too.

    How to make Brownie Peppermint Cookies

    Preheat the oven to 350°F. Line a baking sheet with parchment paper, and set aside.

    In a microwave-safe bowl, melt the chocolate and butter together.

    Pro tip!

    I like to melt the chocolate and butter in 20-second increments so that they do not burn. Stir the mixture after every round until they have melted together. Let cool.

    In another glass bowl, beat the eggs, sugar, peppermint extract and salt with a hand mixer together until well combined.

    Pour in the melted chocolate, and stir gently by hand.

    Add the flour, stirring until just combined.

    Using a 1″ cookie scoop, dollop the brownie cookie batter onto the prepared baking sheet. Leave 1″ between each cookie because they will spread in the oven.

    Bake the cookies for 15-18 minutes, or until they are slightly crisp on the outside.

    Transfer the cookies to wire racks to cool completely.

    Make the peppermint icing. In a glass bowl, whisk the powdered sugar, peppermint extract and water together until smooth.

    Drizzle the icing over the cooled cookies, then sprinkle with crushed candy canes.

    Frequently Asked Questions

    Can I substitute a box of brownie mix for the brownie cookies here?

    I do not know if that would work and do not recommend that. If you want to make Brownie Mix Cookies, check out this recipe.

    How do you store these cookies?

    Store in a cookie tin at room temperature for up to a week.

    Quick tips and tricks to the best brownie cookies:

    • Make a double batch if you plan to share these cookies! They never last long in our house.
    • Switch up the chocolate. I used bittersweet chocolate in these cookies, but you could use semisweet or dark if you prefer one of those.
    • Add them to your cookie trays for a cookie swap or put them in a cookie gift box to share with someone you love. Wrap them in wax paper before placing them in the box so that the peppermint scent does not overtake other flavors.
