It remains one of my favorite dishes because who doesn’t love green beans and bacon? (Assuming, of course, that they eat meat.)

    The combination of crispy fresh green beans with bacon makes for a decadent side dish.

    The beans and bacon cook together in the oven (no blanching necessary!) and are given extra flavor from a mustardy vinaigrette that comes together in a flash.

    Let’s talk ingredients!

    In addition to the tools above, you’re going to need some ingredients to make this recipe, too! Chances are, you might already have some of them in your fridge or pantry. Scroll down to the recipe card for the full measurements and instructions.

    Here’s what you need:

    • Fresh green beanswhile my mom sometimes uses canned green beans for this recipe, I love the texture with fresh. You’ll want to clean, dry and trim them before bundling.
    • Bacon—I’m a sucker for thick cut bacon, but use whatever you’ve got on hand. This recipe does not work as well with turkey bacon, which does not crisp up.
    • Onion—I recommend using a small yellow or white onion.
    • Freshly ground black pepper—we need a sprinkling of this! Depending on how much you like pepper, you can use more.
    • Extra virgin olive oil—or another neutral oil, like avocado oil
    • Red wine vinegar—this is the acid in our dressing, and it works quite nicely. You could use white wine vinegar if you don’t have red wine vinegar.
    • Grainy dijon mustard—this helps the dressing emulsify and stick together. You can use a smooth dijon mustard if you don’t have grainy.
    • Garlic—use the fresh kind and mince it yourself, mmkay? It makes a huge difference in flavor.
    • Granulated sugar—also known as white sugar, we just need a pinch of this to add a little sweetness to the dressing!
    • Kosher salt—I like to use a medium grain kosher salt for recipes like these.

    How to make Bacon Wrapped Green Bean Bundles

    Combine the vinaigrette ingredients into a mason jar. Measure in the olive oil, red wine vinegar, mustard, garlic, salt and pepper.

    Shake vigorously to combine, then set aside.

    Preheat the oven to 350°F.

    Spray a baking dish or a rimmed sheet pan with nonstick cooking spray, and set aside.

    Wash, rinse, dry and trim the green beans. Set aside.

    Cut the bacon slices in half. You want to have more than enough bacon slices to wrap your bundles in, and this will give you more.

    Bundle 7-10 green beans together. Wrap a short bacon strip around them to hold them together. Set into the prepared baking dish.

    Continue until all the green beans have been wrapped.

    Sprinkle the onion on top, and season liberally with pepper (if you like this!).

    Drizzle the vinaigrette over the bundles.

    Bake for 30 minutes in the preheated oven.

    Turn up the heat to 425°F. Cook for an additional 15-20 minutes, or until the bacon is crispy.

    Transfer the Green Bean Bundles to a serving dish, and enjoy warm with your holiday meal!

    Erin’s Easy Entertaining Tips

    These Bacon Wrapped Green Bean Bundles are a fabulous side dish to serve for any gathering.

    I’m thinking Friendsgiving, Thanksgiving, Christmas and more. But they’re also a fantastic side dish for a regular dinner party.

    Here are some thoughts about how to make these for a crowd:

    • Double or triple the recipe for a crowd. Depending on how many people you’re feeding, you’ll want more bundles! Give yourself extra time to put them together.
    • Wrap them in advance. They keep in the fridge, so wrap the bundles and chill. Bake them just before it’s time to serve.
    • Give the bacon time to crisp up. Depending on your oven and the thickness of the bacon, you might need to bake the bundles for more time.

    Can I use canned green beans for this recipe?

    Yes! The original recipe actually calls for canned green beans and works nicely.

    The final texture of the beans will be different than the texture of the final ones in these images, but they will still be delicious!

    Can I make these green beans in advance?

    Yes, you can! My mom likes to make the bundles the day in advance, cover with plastic wrap and refrigerate until the day of.

    The day of, take them out of the fridge, mix up the dressing and drizzle it all over the bundles, then bake the bundles for the most decadent holiday side dish!

    Quick tips and tricks to the best Green Bean Bundles with Bacon

    • Make them early. Since these keep in the fridge, wrap the green beans and store wrapped in plastic. Mix the vinaigrette and store separately. Bake from the fridge when ready.
    • Swap the sweetener. If you don’t want to use sugar in the dressing, you can use the same amount of honey for just a touch of sweetness.
    • How to store: Store in an airtight food storage container in the fridge for 2-3 days.
    • How to reheat: Reheat in the microwave in 30-second bursts until baked through. The bacon won’t be as crispy out of the microwave, but it will still taste good!

    Ingredients
      

    Mustard Vinaigrette

    • 4 tablespoons extra virgin olive oil
    • 2 tablespoons red wine vinegar
    • 1 tablespoon grainy dijon mustard
    • 4 cloves garlic finely minced
    • ½ teaspoon granulated sugar
    • ¼ teaspoon kosher salt

    Green Bean Bundles

    • 1 ½ lb. fresh green beans trimmed
    • 12 oz. bacon
    • 1 onion cut into slivers
    • Freshly ground black pepper to taste

    Instructions
     

    • In a mason jar, mix the vinaigrette ingredients (oil, vinegar, mustard, garlic, salt and pepper) together until combined. Set aside.

    • Take 7-10 green beans, and wrap a bacon strip around each of the bundles. Set into the prepared baking dish. Continue until all the green beans have been wrapped.
    • Sprinkle the onion on top of the bundles.
    • Season the bundles liberally with pepper (if you like this!), and drizzle the vinaigrette over them.
    • Pop the baking dish into the oven for 30 minutes.
    • When the bundles have cooked for 30 minutes, turn up the heat to 425°F, and cook for an additional 15-20 minutes, or until the bacon is crispy.
    • Transfer the Green Bean Bundles to a serving dish, and enjoy warm with your Thanksgiving meal!

    Notes

    Don't want to use sugar? You can substitute the same amount of honey in the dressing easily.
    How to store: Store leftover bundles in an airtight food storage container in the fridge for 2-3 days. Reheat in the microwave until warmed through. They will not be as crispy, but they are still delicious.

    2. I personally do not like bacon or green beans LOL. BUT my husband loves both and so once a year, I am not kidding, I make him a dish of each. Not usually together. This could be an awesome idea for combining the two so I only have to make one dish. This does actually look amazing, I am sure it is a winner. I am the sweet potato lover in the family so that is what I make each thanksgiving.
